 I am just finishing up my two weeks of vacation and it seems the summer is quickly coming to an end.  There are still a few parties to attend so be careful you don't drink more calories than you can burn off.  Try out Annie Cronin's Quinoa Black Bean Salad and check out her blog on living Gluten Free.
We have an express boot camp til the end of August and start back up after Labor day with the four week boot camp. I hope to see you there.
Don't Drink All Your Calories This Summer!

So, you're sitting by the pool drinking a Pina Colada with a fancy umbrella in it.  If you are you're looking at drinking 490 calories for that 8 oz Pina Colada.

Pina ColadaWe tend to forget that drinks have calories too.  It's not just the food you eat while you're enjoying that cocktail.  But it's the cocktail itself that's also full of calories.

Here's a run down of some of your popular drinks and the calories associated with them:

You need to keep these numbers in mind before you order your drink.  One rule that I have is if I have a glass of wine, which is my preferred drink, then I have a glass of water for each glass of wine; a glass of wine, a glass of water.  I usually stop at two glasses. If you're at home, then you can use a smaller wine glass.  This way you fill the glass so you think you are drinking a full glass, but it is portion controlled.

Quinoa and Black Bean Salad

Annie CroninThis recipe is from Annie Cronin, Gluten Free Consultant.  Annie is pursuing her passion for cooking and creating delicious gluten free meals by starting her own business called Enjoy Life Gluten Free.  To learn more, check out her blog here.

It's barbeque time and this is a good, colorful salad to serve or bring along as a side dish. I make quinoa in my rice maker.

4 cups cooked Quinoa
One 15 ounce can black beans
1 cup canned or frozen corn
1 medium to large red onion, chopped
1-2 large tomatoes, chopped
¾ - 1 cup fresh chopped cilantro (to taste)
4 tbs Olive oil
2 tbs Rice vinegar
2 tsp ground cumin

Cook quinoa according to directions. Drain and rinse beans and add along with corn. Mix in all other ingredients. This is a very flexible recipe. You can add a chopped bell pepper or if you want it a little spicier, add some chopped jalapeños. If you are going to store it for a few days, I suggest leaving the tomatoes out until right before you are going to serve it.
