The summer is over and the cold weather is almost here. Autumn is my favorite time of year. The air is crisp and it makes you feel alive. In New England, Autumn means apple picking. Back to School (and work) Lunches
It's back-to-school and back-to-work season. Are you packing the healthiest lunches for your kids and yourself? These hints will provide fun, tasty, and healthy ideas for the ol' brown paper bag:
- Replace soda with water (use flavored water if you have to). Send juice if you must, but remember juice is mostly sugar. Let the kids buy milk at lunch (this helps them towards reaching their goal of 3 dairy products per day).
- Make sure the lunch is a balanced meal including protein, fruits and/or vegetables and grains. Use whole wheat bread on sandwiches.
- Healthy, tasty snack options - mini carrot sticks are great to crunch on, apples, applesauce, peaches, pears, pretzels, a cheese stick, etc.
Do you remember the old saying "An Apple a Day Keeps the Doctor Away"? It just may be true. Apples have anthocyanins and glutathione that have anti-oxidant activity that may defend against carcinogens. The pectin in apples is a type of soluble fiber that helps to lower artery-damaging LDL cholesterol. A single unpeeled apple provides nearly 4g of dietary fiber, almost half of which is heart-healthy pectin.
Now is a great time to start eating healthy and packing a healthy lunch will go a long way in accomplishing your goal.

| Apple Crisp
½ pound apples, cored, pared and thinly sliced
1 ½ teaspoons lemon juice
1 tablespoon water
1 teaspoon honey
¼ teaspoon ground cinnamon
2 teaspoons margarine
2 graham crackers (2 ½-inch squares), made into crumbs
Preheat oven to 375°F. In small mixing bowl, combine apples and lemon juice, tossing to coat; add water, honey and cinnamon, mixing well. Transfer to 2 cup casserole; dot with margarine and sprinkle with graham cracker crumbs. Bake until apples are soft, 30 to 35 minutes.
Makes 2 servings
Per serving: 129 calories; 0.8 g protein, 5 g fat; 23 g carbohydrate; 12 mg calcium; 93 mg sodium; 0 mg cholesterol |
