1st Course Taylor Bay Scallops, sweet potato, coconut-lime broth paired with a Terrunyo Winery Sauvignon Blanc 2011, Chile

2nd Course Cured Chilean Salmon, pickled peppers, tomato relish, corn cake paired with an Amelia Chardonnay, Chile   

3rd Course Empanada, chorizo-butternut squash filling paired with a Terrunyo Cabernet Sauvignon 2008, Chile   

4th Course Beef Churrasco, chimichurri sauce paired with a Marques Casa Concha Carménère, Argentina  

5th Course Bitter Chocolate Flan, crispy plantain, dark caramel sauce paired with a CYT Late Harvest Sauvignon Blanc 2008, Chile  

 

> attending the evening is wine maker Juan Sabja, from Casillero del Diablo Vineyard and we are fortunate to be included in Mr Sabja's visit to America to present his world famous Carménère, one of the highest rated in the world

1st Course Acorn Squash Velouté, stone crab, Granny Smith apples, cider reduction paired with a Chenin Blanc, Rooiberg Winery, 2011 

2nd Course Steelhead Trout, Lyonnaise potatoes, crispy Brussels sprouts, capers, walnut butter sauce paired with a Chardonnay, De Westhof Estate, 2010 

3rd Course Red Wine Braised Escargot, black trumpet mushrooms, bacon, tomato mostarda, puff pastry crisp paired with a Cabernet Reserve, Rooiberg Winery, 2008  

4th Course Pork Shank Confit, spice glazed root vegetables, BBQ onions, smoked fontina paired with a Shiraz, Rooiberg Winery, 2009 

5th Course Dark Chocolate Lava Cake, paired with a Pinotage, Dooihof Estate Dark Lady of Labyrinth, 2011
