> join us at Mattison's Forty-One for Chef Paul Mattison's Bastille Day Menu: Asparagus poached egg, shaved Parmesan, extra virgin olive oil, Mote Marine caviar or refreshing Vichyssoise a potato-and-leek light creamy soup with chives; Châteaubriand, Parmesan stuffed tomatoes, smoked wild mushrooms, haricot vert, port wine demi or Poached Salmon rosemary-honey glaze, sweet potato streusel, citrus beurre blanc; plate of French Cheese-Baguette and Salad Plate; and Crème Brulée Tahitian vanilla bean custard finished with a caramelized sugar crust or Gateau au Chocolat

> each session is Monday through Friday from 8:30-11am

> Specialized Hands-On Cooking Sessions (ages 14-17 or must have completed the Basic Cooking Techniques) Florida/Southern-Style Cooking, Hands-On July 16-20; Pastries & Desserts SOLD OUT Aug 13-17 $225 per student, classes limited to 15 students
