· Fish & Chips jalapeño tartar, malt vinegar paired with a Sierra Nevada Torpedo

· Warm Beet Salad roasted mushroom vinaigrette, ash goat cheese paired with a 2006 Ernie Els Cabernet

· Beef Tenderloin, sumac studded, duck sauce, turnip gratin paired with a 2006 Ernie Els Stellenbosch

· Dessert Trio Espresso Chocolate Paté, Cappuccino Gelato Foam, Molecular Chocolate Pearls paired with a 2008 Ernie Els Proprietor's Blend
