Greetings!


We hope you all had a wonderful Thanksgiving with your loved ones, and had the opportunity to be thankful for all that you have in your life, as I did.

 

Christmas is just around the corner. Somehow, without even wanting to, we are so easily drawn into the whole material energy - Christmas trees, lights, presents, Christmas parties, cocktails, overindulgence ... and it goes on and on.

 It is so easy to forget the true meaning of Christmas.

 

Why not take a moment to meditate on what Christmas means to you, and how, together, we can make this season special and memorable, rather than just another opportunity to buy more gadgets and objects which only increase our inner emptiness and unhappiness. 

   

Live Food Academy is working to make a difference in the community. We will be giving lots of free demonstrations and affordable classes and workshops in the New Year to help people improve their health and well-being, and feel good from the inside out.

Feed And Inspire The Homeless


 

homelessThe other day, a friend of mine was telling me how she and her brother were giving out some blankets to the homeless in Sacramento on Thanksgiving as it was so cold.

How wonderful is that? To be honest, the cold weather arrived so suddenly, that I hadn't yet made the connection that there were people outside in this cold weather.  Immediately I felt in my heart that perhaps there was something I could do.

So, Live Food Academy is currently organizing a  food and warm clothing/blanket distribution program. If you would like to donate any clothing, blankets or other items, such as canned or packaged foods, vegan/vegetarian preferred, or otherwise help in any way, please contact us.

What should I do with the pulp
left over from making nut milk?

In the Nut Milk Class on November 14th, we mentioned that there were many recipes to use the left-over pulp from making nut milk.
As a general rule nothing is thrown away in raw food preparation. The pulp left over from juicing goes into preparing pates, nut burgers, and nut loaves. The vegetable scraps are used for juices. The pulp left over from making nut milks can be used for both sweet and savory recipes, including pates, cereals, cookies and even biscotti!!
Below is a recipe for special Thanksgiving Stuffing without wheat, gluten or soy!

Special Thanksgiving Stuffing
Makes 3 cups
Special Equipment: food processor, dehydrator

Ingredients:
1 1/2 cups almond pulp
1/2 onion, finely minced
1 large clove garlic, minced
4 stalks celery, minced
1 large apple, chopped
1 Tbsp olive oil
1/2 tsp sea salt
2 tsp poultry seasoning
1 tsp dried sage
1 tsp dried thyme
1/2 cup raisins, soaked 10 mins to soften
1/4 cup raw walnuts, soaked, dehydrated or raw, unsoaked
3 medium Portobello mushrooms, finely chopped
2 Tbsp Nama Shoyu, or wheat-free Tamari
3 Tbsp ground flax seed

Place almond pulp in a medium-sized bowl.
Pulse chop walnuts in processor until they become small bits. Add to bowl.
Process apple into small bits and add to bowl.
Add minced onion, garlic, olive oil, salt, dried herbs, raisins, mushrooms, Shoyu and ground flax to bowl. Mix together with hands until all ingredients are well combined.
Spread stuffing thinly on a teflex sheet and dehydrate at 135 degrees for 2 hours, then reduce to 105 and continue to dehydrate until crunchy on the top.
Remove teflex sheet by placing another tray on the top and inverting the tray.
Continue to dry until desired consistency. Another 2-3 hours.
Stores in the refrigerator for up to a week.

Our next Making Raw Food Simple Class on Pates and Dips in February will feature a delicious pate made with carrot pulp, sun-dried tomatoes and almond pulp.

 The Stability of Coconut Oil
Unsaturated oils in cooked foods become rancid in just a few hours, even in the refrigerator, one reason for the "stale" taste of leftovers. However, according to Peat, eating fresh unsaturated fats is even worse, because once inside the body, they will oxidize (turn rancid) very rapidly due to being heated and mixed with oxygen. Not so with coconut oil. Even after one year at room temperature, coconut oil shows no evidence of rancidity even though it contains 9% linoleic (omega - 6) polyunsaturated acid. Peat theorizes that coconut oil may have antioxidant properties, since the oil doesn't turn rancid and since it reduces our need for vitamin E, whereas unsaturated oils deplete vitamin E.
