Greenskate 2011

By Ina Avdaha

A tiny group in every possible way, 8 riders ages 3 to 10 and their parents. We left from entreAmigos,  and we rode through the main street, down to the beach and then the plaza. We greenskatepicked up garbage, ate chocolate and skated for hours.

You can ride with your kid to almost anywhere in a longboard! A happy parent said.

The kids were so proud and thrilled to be part of such a fun, meaningful event like Greenskate. It's amazing to plant this seed in San Pancho! Thanks to the parents and treee.mx for their support! And please keep in mind that there are eco-efficient alternatives of travel and recreation, try to use them!greenskate2

Update from the Judges Office

Ramón Palomares

Update By Tamara

Due to proactive planning, municipal help and lots of volunteers, this years Semana Santa went off without a hitch. Even taking into the fact that there were more visitors this year than last, most systems in place worked well. The garbage pickup was increased with an extra day, Sunday, and three dumpsters in place. The only problem was that the beach containers for garbage and recyclables were

overflowing quickly and people continued to drop their trash alongside them. We need a few volunteers with quads to help clean up the garbage on the beach and take the recycling to entreAmigos. If you can help, it will be appreciated.

The local businesses did better than years past as did the restaurants.

There was a visitor parking area near the beach that controlled the exra traffic. There was not one accident during the holidays. With Tranisto directing traffic in a one way circle, the conjestion was much less than last year.

Have a safe week!

Birding Spring 2011

How`s Birding in San Pancho this Spring 2011?

This seems to be a common question these days. To answer it, I will get to explain the basics of bird migration and breeding in this area.

Most of the migratory coming to the Mexico`s West Pacific coast (or winter birds as we call them), start arriving sometime between October and February to this area. The time they stay in the area varies from species to species but some of them start leaving as early as late March (for instance some of the colorful Painted, Varies and Blue Buntings) and some of species start leaving as late as July or August, like the musical Black-bellied Whistling Ducks. There are multiple factors  determin

black bird jay
Black Thorated Magpie Jay by Bob Fishel

ing the seasonality of bird migration, such as availability of food, temperature or simply their biological clock saying is time to go back home to breed.

At this time of the year we start seeing less and less

migratory species and the tropical species  seem to start taking over their ground. Some tropical species like the Citroline and Elegant Trogons are often seen mating or even with their young juveniles learning the abc`s of being a bird. Black-thorated Jays and Chachalacas are at their nosiest times as they are mating or making distractive calls to protect their offspring.

Regarding the estuary, we are seeing that the water-lilies and water-lettuce start covering the surface once again and might need some human-help to prevent the depletion of oxygen and death of fish and other aquatic species. This spring, thanks to the extended water-flow after last summer and fall`s heavy rains, the estuary seems to have enough water to prevent the over-bloom of such plant species.

The large flocks of Gulls that crowded the beach-break last year don´t seem to be visiting this year. My assumption is the lack of Gull`s this year might associated to the decrease of migrating Brown Pelicans Beach breaksince they create a feeding community. Is this due to climate change, less availability of food for them in the area, La Niña year? Who knows, we hope to see them again sometime...

Days are longer and longer, come out and enjoy the amazing beauty of San Pancho`s birdlife.

Notes from the Ranch

This is a story about 8 cups of water and what I can cook with it.

Start with a big pot with a lid and add 8 cups of water. Bring to a boil. cooking pot

The first thing I am going to make is a traditional salsa de la cocina, Red Sauce. Drop 8 roma tomatoes, 1 jalapeño chile, 1 medium white onion quartered, 1 tsp cumin seed, 3 cloves garlic peeled and 1 tsp of salt into the boiling water. Lower heat and simmer at medium for 10 minutes. With slotted spoon, remove all vegetables (garlic included) and put in a blender or food processor. Add 1/2 cup cooking water. Blend until smooth. Add salt and black pepper to taste. Pour into containers.

Now I'm going to make Salsa de Chile de Arbol. Heat up a skillet, put 8 roma tomatoes, 3 cloves garlic unpeeled, 4 or 5 dried chile de arbol and roast on medium high heat for 5 minutes, remove chilies and garlic. Continue roasting tomatoes for 10 more minutes. Remove Salsatomatoes and put in a blender or food processor with the peeled garlic and whole roasted chilies, 1 tsp salt. Add 1 cup cooking water from the big pot to the skillet to remove the stuck tomato skins. Pour in to blender. Blend until chunky. Again, salt and black pepper to taste. Pour into containers.

Put cooking pot back on the burner and bring to a slow boil. Add 6 pieces of chicken and 8 small potatoes. Let slow boil for 15 to 20 minutes. Remove chicken and potatoes and put on a plate for later.

In another sauce pan with a lid, heat 2 tblsp cooking oil and add 1 cup white rice and 1/2 tsp whole cumin seeds.Brown rice and add 2 cups of cooking liquid. Bring to a boil and then cover and lower to simmer until you have steam vents coming through the rice. Set aside.

Heat your choice of molé sauce in a skillet and add 1/2 cup of the cooking water and 1 serrano chile. Stir to blend. Add chicken pieces and potatoes. Cover and lower heat until heated throughly cooked.

At this point I've made about 6 cups of salsa, chicken and potato chicken molemolé, and rice. All with 8 cups of water. And I always have some water left over to put on the dogs and cat food.

I am adrift in an ocean of heirloom tomatoes! I'm canning and preserving every chance I can. And the Habañero Chilies and Chile de Arboles are just about ripe. The little Machito Chiles need another week but really, I just grow the Machitos to look at. I've not had the courage to eat one yet!

I belatedly have discovered Patricks homemade ice cream. OH MY GOD....I had the vanilla with strawberries the other night. It was so good that when Karstan came creeping into the kitchen later to finish it off, I actually got out of bed and chased him away. There goes Mother of the Year Award, again. I can not buy more for a while. It is so delicious that if I have it in the house, I will eat it all. No sharing, no nada. And I can only spend so much time at the gym. But treat yourself to a liter of the most amazing ice cream I have ever tasted. Yum.

Things I am thankful for this week: all of the people in town for Semana Santa and Semana Pascua, my wonderful ranch kitchen and of, course, 8 cups of water.

Blessings, Tamara
