Beetnuts Pate
One of our favorite customers, Marg Henschel made this recipe for our wedding back in August and we have had many request, so here it is!

1/2 cup Almonds,cashews etc.) 1/4 cup Sunflower Seeds 1/4 cup Pumpkin Seeds 3 Beets peeled, chopped 2 Garlic Cloves 100 ml. Lemon Juice
50 ml. Olive Oil Celtic salt to taste
Method: In food processor, add nuts,and seeds and process to a buttery consistency, set aside in a bowl. Round 2 of processor, add beets, garlic, lemon juice, olive oil and 1 tsp of salt. Mix together until super fine. Add beet mixture to the nut mixture and mix until smooth.
Cheese: Cashew Mayonnaise 1 cup Cashews - soaked 1 cup Water or Coconut Water
1/4 cup Coconut Oil 2 Tbsp Olive Oil 1/4 tsp Ground Mustard Seeds or Mustard Powder 2 Tsp Lemon Juice 1/4 tsp. Salt 1/2 tsp Minced garlic
In a food processor or blender, process cashews with water until smooth. Add remaining ingredients and mix until smooth.
Assembly:
Slice cucumber on the diagonal and place 3 slices on each plate.
Spoon a dollop of Cheese on each cucumber slice and flatten.
With the beet mixture, fill a small mold and place a shape on each cucumber slice on top of the cheese.
Garnish plate with parsley. |

Greetings!
Winter is really here! I was actually delighted to see the snow. I bundled Abigail up and put her outside while Cody shoveled the walkways. Even though I don't like the cold, I thought of the positives to why we need snow. And just the shear happiness on my daughters face while she brought her cold hands to me to warm up made me smile.
I thought about the rest the land gets, the moisture and beauty the snow brings for the Spring and the abundance of wonderful produce we get even in our tiny little growing season. I also think about how winter time is a time of rest for us. A time to slow down, relax and soak in some deep sleep. I learned a lot from Paul Nison's message while he was here. He called me a few days later and we got to chat a bit more on the importance of sleep. I encourage to do your own research and learn all the amazing health benefits of good quality sleep, especially getting to sleep prior to 10 pm. And for those that can not sleep, it is the beginning stages of disease. Your body is telling you something, listen and be proactive.

HAPPY BIRTHDAY ABIGAIL DAHL! NOVEMBER 19, 2010 Where has the time gone? What happen to my little baby? I can't believe my baby is turning into a little girl. Abigail is talking in complete sentences, using the potty and now sleeping in her very own bed! She can count to 6, almost sing all of Twinkle, Twinkle Little Star and definitely can tell you what she wants!
