Lemon Pie
Lemon Pie Okay, I have to say, I am impressed that I created a dessert that I can have while I am on my cleanse. It's pretty darn good and great for diabetics.

1 cup macadamia nuts
1 cup shredded coconut
1 tbsp xylitol

Process the macadamia nuts, shredded coconut and xylitol in a food processor until fine.
Press in a pie plate or a spring form pan. Place in the freezer while you make the filling so the crust will firm up.

1 cup young coconut meat
1/4 cup lemon juice
2-3 tbsp xylitol (you can add a little more if you want it sweeter)
1 tbsp lemon zest
1/2 t. turmeric- optional (for that lemony yellow color only)
1 tbsp coconut oil
2-3 tbsp coconut concentrate
2-3 tbsp Irish moss, soaked (optional)

In a Vita Mix or high speed blender, blend all of the filling ingredients until smooth. Pour the filling into the tart or pie pan. Chill in the fridge until set, 3-6 hours.

Whip Cream
1 young coconut meat, thick
2 tbsp lemon juice
1-2 drops lemon essential oil
1-2 tbsp xylitol

Blend in a high power blender until creamy. Spread on top of the lemon pie.
Usborne Book Party

Mouse Books

I'm so excited to be offering a book party. Cody and I absolutely love books. We read a book a week and we read at least 5 books or more a day to Abigail. We really want to encourage her to read and love the written word.

I am very impressed with the Usborne books and want to share it with you.
Usborne books...trusted by parents and teachers for their quality and value! Enjoyed by children for their humour and colour, their clear but never patronizing text!
Learning is easier, and more fun and enjoyable with a wonderful Usborne book. From bath books to board books, from early reading to chapter books, from music to art, or from language books to history...there is something here for every interest and every level.
*Help your child develop a love of reading
*Have books so you can capture the teachable moment
*Books in the home determine success later in life
*Over 2000 titles to choose from

As an incentive, I will be serving raw food appetizers and we will be giving away freebies too. So please call or email to register.

MacaPro Xpresso

If you love coffee but not the addictive side effects then you will love this new product we just got in. If you are looking for a real energy boost and the yummy flavor of coffee you have met your match. I made the most amazing lattes the other night for my sugar cleansers and we all loved it! Here is the recipe:

Brew in a regular coffee pot:

Maca Xpresso

I use 1/2 maca, 1/2 teccino. I like the Cafe or Java flavor. I usually brew 6 cups and use 2 tbsp each.

For the milk:

1 cup cashews
2 cups water
1-2 tbsp xylitol
1/2 tsp vanilla
1/2 tsp sea salt

Blend well in a high speed blender. Mix a little cashew milk with the Maca coffee in a coffee mug and sprinkle with cinnamon. It is delicious!!

Sun Sprouts

Scientists have studied sprouts for centuries to better understand their high levels of disease-preventing phytochemicals, and how they contribute to better health, from prevention to treatment of life-threatening diseases. Major organizations including the National Institutes of Health, American Cancer Society and Johns Hopkins University have reinforced the benefits of sprouts with ongoing studies that explore various sprout varieties for their nutritional properties and to validate health claims.
According to Paul Talalay, MD, in the American Cancer Society NEWS, "broccoli sprouts are better for you than full-grown broccoli, and contain more of the enzyme sulforaphane which helps protect cells and prevents their genes from turning into cancer." His findings are consistent with several epidemiologic studies that have shown that sprouts contain significant amounts of vitamins A, C and D. Sprouts are widely recognized by nutrition conscious consumers and health care professionals as a "wonder food."
