Happy Happy Summer Everyone! I hope you are all having a  great time, feeling good and eating the best food ever. I love this time of the year and love going to the Farmer's Market. Have you tried the Kingsland Market yet? Lund's has his spinach in and the carrots will be here soon.

If you are looking for a little excitement from your daily routine, join us for our Lunch n' Learn series this summer; every Thursday from noon to 1 pm.
Also, we have new products in too! We have Matt & Angela Monarch coming this fall and we have secured Paul Nison for November 4-6th. Stay tune we have lots of exciting new things happening for the fall.

Lunch n' Learn
Raw Lasagna
Do you need a little excitement from your daily lunch routine? Come learn how to make delicious easy gourmet raw lunches quick. These lunch n learn raw food courses will run in a 4 week series every Thursday from 12 pm to 1 pm. Learn how to make soups, salads, sandwiches and quick delicious desserts. Each week will feature a different cuisine theme. This week's feature:

Pad Thai with Kelp Noodles
Coconut Curried Soup
Asian Greens with Lemon-Tahini Dressing
Thai Iced Tea
Almond Fruit Macaroons

Each class will include recipe handouts, demonstration and a full lunch. This will be a family style sit down lunch after recipe demonstrations. All food is organic and local if possible. Class size is limited. Please call 403-254-5991 to register.

Lemon Pie
Lemon Pie Okay, I have to say, I am impressed that I created a dessert that I can have while I am on my cleanse. It's pretty darn good and great for diabetics.

Crust:
1 cup macadamia nuts
1 cup shredded coconut
1 tbsp xylitol

Process the macadamia nuts, shredded coconut and xylitol in a food processor until fine.
Press in a pie plate or a spring form pan. Place in the freezer while you make the filling so the crust will firm up.

Filling:
1 cup young coconut meat
1/4 cup lemon juice
2-3 tbsp xylitol (you can add a little more if you want it sweeter)
1 tbsp lemon zest
1/2 t. turmeric- optional (for that lemony yellow color only)
1 tbsp coconut oil
2-3 tbsp coconut concentrate
2-3 tbsp Irish moss, soaked (optional)

In a Vita Mix or high speed blender, blend all of the filling ingredients until smooth. Pour the filling into the tart or pie pan. Chill in the fridge until set, 3-6 hours.


Whip Cream
1 young coconut meat, thick
2 tbsp lemon juice
1-2 drops lemon essential oil
1-2 tbsp xylitol

Blend in a high power blender until creamy. Spread on top of the lemon pie.

I'm so excited to be offering a book party. Cody and I absolutely love books. We read a book a week and we read at least 5 books or more a day to Abigail. We really want to encourage her to read and love the written word.

If you love coffee but not the addictive side effects then you will love this new product we just got in. If you are looking for a real energy boost and the yummy flavor of coffee you have met your match. I made the most amazing lattes the other night for my sugar cleansers and we all loved it! Here is the recipe:

Brew in a regular coffee pot:

Maca Xpresso
Teccinno

I use 1/2 maca, 1/2 teccino. I like the Cafe or Java flavor. I usually brew 6 cups and use 2 tbsp each.

For the milk:

1 cup cashews
2 cups water
1-2 tbsp xylitol
1/2 tsp vanilla
1/2 tsp sea salt

Blend well in a high speed blender. Mix a little cashew milk with the Maca coffee in a coffee mug and sprinkle with cinnamon. It is delicious!!
