Paella Vallenciana on the Grill

| I am sending you a second issue of Smoke Signals this month (only one day after the regular issue) out of self-defense. Let me explain:
Last night after dinner I switched on my favorite TV show, Good Eats with Alton Brown on the FoodNetwork, and there he was stealing my thunder! He was preparing Paella Valenciana on the grill. Now I'm a huge fan of Alton. He does just what I try to do, tell people not just what to do but why. And when it came to his show on paella, he nailed it. It was so much like my article on the subject I felt uncomfortable. If I held it til next month as I planned, surely someone would accuse me of plagiarizing.
So out of self defense, I am releasing my article and recipe today. I had great fun researching it, testing it, and I even took a class in paella at Chicago's famous festive Spanish restaurant Cafe Ba Ba Reeba. The results are worth the effort and sure to be a crowd pleaser. And, no, you do not need a specialized paella pan. And yes, it is easy to do on the grill, in fact, it is easier to do on the grill.
Forget what you think you know about paella. It is not all seafood. Paella has many variations. The original probably had snails and rabbit. Mine has chicken and sausage. It is a fabulously flavorful rice
dish presented with fanfare and flash with a pinwheel of
colors and shapes. Paella is tricky,
but worth the effort.
Paella is the national dish of Spain, and it was first cooked in a field over a wood fire near Valencia, a magnificent Mediterranean seaport famous for its food, especially Valencia oranges and paella. Today, most local families prepare paella at least once a week, usually cooked by the man of the family, often outdoors, and then the family eats it right from the communal pan.
So I invite you to view Alton Brown on TV this week, and then try my recipe, and become a master of a truly wonderful dish, Paella Valenciana.

| I had a friend ask me recently what to get his Mom for Mother's Day. She, it seems, is of the breed of Mom who is happiest in her kitchen.
