BakeSpace is teaming up Libby's for a members-only taste test and recipe challenge. The prize is a nifty KitchenAid hand mixer (winner gets to choose the color). To play, simply:
  • Visit the Great Pumpkin Giveaway on BakeSpace to read the rules.
  • Prepare your recipe using Libby's Pumpkin Puree and post it along with a photo on BakeSpace on or before December 11th.

Here are some great pumpkin-infused recipe ideas from the experts at Libby's. Each is guaranteed to add some pumpkin power to your favorite foods.


Pumpkin-Infused Mashed Potatoes

Turns mashed potatoes a rich, golden color while helping reduce fat and calories in each serving.
Stir 1/2 cup of canned 100% pure pumpkin for each cup of mashed potatoes.

Pumpkin-Infused Cocoa
Pumpkin will melt right into your hot chocolate, helping give it a rich, smooth body and some added fiber.
Make a mug of hot cocoa with low-fat milk and stir in a 1/4 cup of canned 100% pure pumpkin.

Pumpkin-Infused Mac & Cheese
Get the same great taste of traditional Mac & Cheese without all the fat.
Substitute 1/2 cup canned 100% pure pumpkin for all the butter or margarine called for in the directions.

Pumpkin-Infused Hummus
Pumpkin adds a touch of color and light earthiness to the flavor of hummus.
Stir 1/4 cup canned 100% pure pumpkin into 1 cup (about 7 oz. container) of hummus.

Pumpkin-Infused Pasta Sauce
Pumpkin added to your favorite tomato sauce reduces overall sodium per serving.
Stir 1 cup canned 100% pure pumpkin for every 3 cups (about 26 oz.) of your favorite pasta sauce.

pumpkin canQ: What's the best way to store leftover canned pumpkin?

Remove pumpkin from can and store in a sealed plastic container for up to:
  • 1 week in the refrigerator
  • 3 months in the freezer
When freezing, be sure to leave space at the top of the container, as the pumpkin may expand when frozen. The pumpkin may have a separated appearance when thawed due to air bubbles. Simply stir to blend. This will not affect quality or taste.

Q: How many cups are in one can?

  • One 15 oz. can equals 1 ¾ cups pumpkin puree
  • One 29 oz. can equals 3 ½ cups pumpkin puree

Q: What is the difference between pure pumpkin, solid pack pumpkin and pumpkin puree?

They're all exactly the same: 100% pure pumpkin.

Q: What kinds of pumpkins are used to make canned pumpkin?

LIBBY'S uses a special variety of pumpkin called "Dickinson," which has a delicious taste, creamy texture and pleasing orange color.

Q: Can I eat LIBBY's canned pumpkin without cooking?

Yes! It is cooked thoroughly during the canning process so it is perfectly safe to enjoy straight from the can.
