So What to Do With Those Snow Pea & Carrots?: This past week we heard from both CSA members and Farmer's Market customers alike .... "Whoa, you grow some big carrots!!! Well we'll admit in another two weeks or so some of them could have become close to being described as gnarly, but don't be alarmed, they still cook and taste great. This is what we did with them tonight for dinner:
wash carrots, peel and dice micro wave carrots in a salty water for 4 mins ...drain water wash snow peas and pat dry melt butter in a skillet toss both diced carrots and snow peas in skillet add brown sugar, not too much saute combo, about 3 mins on low heat turn off heat and consider adding a little fresh ginger serve (great with those banana fingerling potatoes that came in your shares when roasted w/garlic on the side)
Not into cooking? Consider juicing them with your beets!
What's Growing: Weeds are in full swing, along with tomatoes (most of them green, perhaps two weeks away,) bell peppers, sweet corn, green beans, potatoes, fennel, watermelon, cantaloupe, onions, squash and more.
Back 40! The rains have abated, almost too much, and we've been working hard at clearing the additional 40 acres that we purchased back in late December. With any luck we will be able to plant something back there come early summer. Purple Hull Peas perhaps.
