A lot of you have been requesting that we offer pasture raised eggs and "what-not" as a part of our CSA program. In addition, you may have read in prior farm updates that we now have a working chef in our farm kitchen. Well we are pleased to tell you that we now finally have our online shopping cart on the web which, will provide you the option of ordering eggs and prepared foods. (Being as it may, supplies are limited and available on a first come first service basis.) The eggs come from Dustin's Eggs whom many of you may know as he attends both the Farmer's Markets at both Rice Univ. and Kingwood. When you have a moment, take a look at this link   http://www.woodduckfarm.com/choose-location/  You can place your order between now and this Friday midnight for delivery next week with your CSA share. (FYI this service is available to non CSA members of the farm too.) We request that your minimum order be $15.00, but are taking smaller orders for the time being. So if you just wish to order eggs or a single quart of soup/gumbo, then please do so.    

 

 Above is what came this week in our Full Shares.  Strawberries, Bulb Fennel, Broccoli, Cauliflower, Beets, Turnips, Radishes, Micro Greens and Head Lettuce (both Red and Green.)

Winter/Spring CSA Shares:  Our winter CSA program began last week,, but we are still taking registration at several of our 13 Houston area pick up locations. Prices are prorated each week to reflect cost.  Our anticipated winter harvest over the ten week program will include cold hardy crops such as cauliflower, spinach, brussells sprouts, sugar snap peas, carrots, beets, collards, onions, kale, purple kohlrabi, cilantro, radishes, mustard greens, salad mix, broccoli, potatoes, stored winter squash etc.  Visit this link to learn more Winter/Sprng CSA, 2012  So how much produces comes in a share? FYI partial shares receive approximately 1/3 less than the full share, (so for example perhaps 5 beets vs. 8.)

Recipes? One of our CSA members, Stephen, provided this email   "When I got my share I immediately thought - what can I do with all these greens and one fennel bulb?  Well, one google search later I found this..." recipe below.

"I used the turnip greens, beet greens, fennel and fennel greens in this, along with some spinach from last week.  It was absolutely delicious!"

 Creamy Fennel and Greens Soup   by Kay Chun  

  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 fennel bulb, trimmed and chopped
  • 1 small onion, chopped
  • 1 pound mixed dark leafy greens such as collard and beet, coarse stems and center ribs discarded and leaves chopped
  • 6 cups water
  • 3 cups baby spinach (2 ounces)
  • 1/2 cup heavy cream
  • 1 tablespoon fresh lemon juice
  • Garnish: fennel fronds or chopped dill
