The Sophie's News For December
We've added some coupons again and given you a couple of more days to use them - see them below. Be careful to follow the instructions and dates. Several of our fans were disappointed by missing the correct days or filling in the "comments" section incorrectly (or not at all) at the back of the online ordering pages the last few months. We truly want everyone to be happy so we will try to be very clear about what you can do to redeem your coupons.

Sophie's Recipe of the Month
You will find that these favorite recipes of Eduardo are designed so that you can get great tasting Cuban food at home without having to use commercial cooking equipment. Many Cuban recipes require several steps with some requiring advanced timing and we will include a few of those for our more ambitious fans.
Others, you will be able to enjoy within a short preparation time. We hope you have fun cooking (and eating) Cuban style.
Arroz con Puerco
This is another Cuban classic. Many similar Caribbean recipes call for a pressure cooker but in this style you don't need one.

Sofrito:
| | Green pepper minced 4 oz | | | Red pepper minced 4 oz | | | Onion minced | 6 oz | | Tomato minced 4 oz | | | Garlic cloves minced 5 ea. | | |
Rice:
| | Olive Oil | 1 tablespoon | | Goya gandules 1 can | | | Green olives (drained) 4 oz | | | Rice | 3 cups | | Water | 4 cups | | Sazon Goya | 1 1/2 packs | | Salt | 1 1/2 teaspoons | |
Preparation:

Season meat with adobo, salt and pepper evenly and set aside.
Mix the Sofrito ingredients gently in a bowl.

In a large pot, heat olive oil in medium heat for 3 minutes, add sofrito and let it cook for about 6 to 8 minutes until sofrito is tender.

Add seasoned pork to pot and cook for 15 minutes.
Mix well and add water. Let water boil and add gandules.
let it cook for 15 minutes.

Mix well, cover pot and lower heat to a minimum.

Let rice cook; once rice is done, remove from heat.
| | Garnish with green olives and serve. |
* You can experiment with any meat or poultry that you like - not just pork.
This preparation and the flavors will work with a wide variety of meats.

This month will be the beginning of the Frequently Asked Questions section. Please send your questions to us and we will select the most popular to answer each month.
We begin with the category of questions about our famous green sauce; the Sophie's Special Green Sauce is its official name. The recipe is proprietary - a secret recipe - but what we can tell you is that it is made up mostly of Jalapenos. This is a very expensive ingredient which is why you don't find it in many restaurants. It is also why we are careful not to waste any of it. At some times of the year it is very difficult to find enough for our needs at any price. We add a special blend of spices and oils and it is an amazing addition to almost any of our meals or sandwiches.
It does not contain any egg or dairy products; no mayonnaise, no guacamole, no avocado, no flour, no chemicals, no preservatives or stabilizers (it separates rather quickly if left unshaken), and is produced fresh every day. The "spiciness" will also vary from batch to batch as there are sometimes individual differences in the Jalapeno crop, so try a small amount at first (and wait a few moments) and then add more to your taste.
Many of you have also asked about buying larger quantities and we will be testing the sale in small bottles at our Lexington Street Sophie's pretty soon. A move to manufacturing this for resale would require a large capital outlay and we will consider that if the testing goes well - stay tuned!
