| | Chef Eduardo Morgado | Sophie's Recipe of the Month
Eduardo got back just in time to provide another interesting recipe from Cuba. This one is called Bistec a la Cubana. Steak is prepared many different ways in Cuba, just as it is here in the USA, and we will probably see some more of those in the future, but this one is a very simple yet classicCuban style recipe. As with all of the recipes, you will be able to find it soon in the archives of the web page.
Eduardo says this one is great anytime but some Americans like it for brakfast more than other times.
You will find that these favorite recipes of Eduardo are designed so that you can get great tasting Cuban food at home without having to use commercial cooking equipment. Many Cuban recipes require several steps with some requiring advanced timing and we will include a few of those for our more ambitious fans. Others, you will be able to enjoy within a short preparation time. We hope you have fun cooking (and eating) Cuban style.
Bistec a la Cubana
Eduardo likes to have his steak with about 6 ounces of white rice; you may like it with rice or potatoes or salad - it's up to you.
Ingredients
(The recipe is for one serving of steak. You can increase it according to your needs and vary the weight as you like.)
1 piece of *Palomilla Steak about 1/4" thick and any weight you like (6 - 8oz. ea. is a good range)
3 oz. onions
1 oz. olive oil
1 pinch salt
1 pinch pepper
2 eggs
* You can use any cut of steak that you like; some like top round, others like sirloin or chuck. With the basic cuts some people like to buy them a little thicker and pound them with a wooden mallet to flatten and tenderize them. Others just have them sliced thinly.
Preparation
Heat the olive oil in a frying pan to hot (3 minutes or so).
Rub salt and pepper on the steak.
Sear the meat in the oil for about three minutes on each side while you sautee the onions in the pan with the steak.
Crack the two eggs on top of the steak; cover the pan with a lid and lower the heat for three minutes.
Serve with your favorite sides. ¡Buen provecho! The Sophie's Team

21 W. 45th St. is the new site. Tom Chamberlain, the Sophie's franchisee at the Fulton St. Sophie's, has partnered with a long time friend and long-time business associate, Alvin Lopez, to build the next great Sophie's Cuban Cuisine restaurant in Manhattan. They are excited about this spot between 5th and 6th hope to be delighting hundreds and hundreds of hungry people just like you every weekday and probably Saturdays too with this tasty Cuban food.
We'll have more in the weeks ahead and their preliminary web page will be up soon.
We all wish them the greatest of good fortune with the newest Sophie's.

Alvin has been in training at Lexington Ave. and at Chambers Street and will soon get a master's class from Eduardo himself. By the time 45th Street opens he will be totally ready to join his partner Tom (the existing franchisee at Fulton Street) to bring you the very freshest, flavorful, authentic, tasty Cuban food that you can imagine. |
