Sophie's Recipe of the Month
 
Eduardo says this one is his favorite at home because it has so many possible uses.  If you make some, please let us know how you liked it.
 
You will find that these favorite recipes of Eduardo are designed so that you can get great tasting Cuban food at home without having to use commercial cooking equipment.  Many Cuban recipes require several steps with some requiring advanced timing and we will include a few of those for our more ambitious fans.  Others, you will be able to enjoy within a short preparation time.  We hope you have fun cooking (and eating) Cuban style.


Cuban Meatballs
This recipe can be used many ways.  You can serve it as a main course with white rice or pasta; you can try making mini versions for an appetizer; chill and slice them for cold sandwiches; or keep them steamy hot for meatball subs; or let your imagination lead you to a new food adventure.

Ingredients

2 lb ground beef (very lean) - once again, L'garto or Bola de sapo, often used in Cuban cooking, can be used.

2 average spanish onion, chopped into small cubes
 
1 red and 1 green pepper, diced
 

2 oz. of garlic chopped fine (minced)

2 oz. ketchup
 
1 oz. olive oil

6 eggs

4 oz. plain bread crumbs
 
1 tsp. black pepper
 
1/2 tsp. salt
 
1 laurel leaf (bay leaf)
 
8 oz. tomato paste
 
4 oz. white wine (cooking wine)


 
Preparation

You will need a mixing bowl, an oven pan, and a large pot with cover.
 
Spread or spray a very light coating of oil on the oven pan.
 
Mix the ground beef, 1/2 the chopped onions, half the chopped peppers, half the minced garlic, ketchup, eggs, cumin, salt, pepper, bread crumbs in the bowl until well blended.
   
Form the mix into about 10, 4 oz. balls.
 
Heat the oven to 350 degrees; place each ball firmly in the bottom of the pan and bake for 30 minutes in the oven.
 
While the meatballs are baking. put the large pot on the stove with 1 oz. of olive oil.  Heat to hot and add the rest of the garlic and onions and then the peppers.
 
Add 1 bay leaf (laurel) and saute for 3 - 4 minutes.
 
Add the 8 oz. of tomato paste and heat for 2 - 3 minutes more.
 
Add the meatballs from the oven and add 4 oz. of white wine.
 
Cover and cook 10 - 15 minutes over low heat.
 
Serve as above or whichever way you like and enjoy the taste of Cuba!

New Sophie's Cuban Cuisine Restaurant
 
21 W. 45th St. is the new site.  Tom Chamberlain, the Sophie's franchisee at the Fulton St. Sophie's, has partnered with an old friend and long-time business associate, Alvin Lopez, to build the next great Sophie's Cuban Cuisine restaurant in Manhattan.  They are excited about this spot between 5th and 6th hope to be delighting hundreds and hundreds of hungry people just like you every weekday and probably Saturdays too with this tasty Cuban food.
 
We'll have more in the weeks ahead and their preliminary web page will be up soon.
 
We all wish them the greatest of good fortune with the newest Sophie's.

This month we'll feature Tom and Alvin at the front of their new restaurant - it certainly doesn't look good now but before you know it  there will be long lines here at lunch with Tom and Alvin working feverishly to serve as many of you as fast as they can with the delicious flavors of Cuba!

We hope you all enter the contest this month and wish you luck with the great prizes.  We're very happy to be able to do these kinds of promotions for you, our loyal fans.  We see your faces all the time in the restaurants but we are so busy that we barely have time to nod or say hello to our regular guests.  It would be terrific if you could respond back to us with suggestions for the newsletter or questions or suggestions about the restaurants.  We would be happy to devote a section of the newsletter every month to Q&A.  Maybe some of you might even want to share a favorite Cuban recipe of your own (screened by Eduardo of course).  Please let us know and thank you for your loyalty,
