How to Eat Tofu!

Most people have strong opinions about tofu...  They either love it or hate it!  The first reaction of most of our friends when we serve tofu is not quite the same as when steak is on the menu but here is a recipe that has swayed even the most hardcore of tofu haters! 

Grilled Veggie Salad with Tofu

2 Small Zucchini
1 Small Eggplant Tofu
1 Red pepper
1 Block of firm organic tofu
Marinade
1 tbsp chili oil
5 tbsp Tamari sauce
2 cloves of garlic minced
Fresh ground black pepper
Greens
Crisp Romaine Lettuce
Coarse chopped Spinach
halved grape or cherry tomatoes
Dressing
1/4 cup olive oil
3 tbsp rice wine vinegar
1 tbsp soy sauce
1 clove of garlic crushed
fresh ground pepper

Combine chili oil, tamari, garlic and pepper in a large flat glass dish. Slice tofu into 1cm widths and place in the marinade overnight. 

Just before grilling, thinly slice the zucchini, eggplant and red pepper lengthwise for grilling.  then toss sliced veggies in the marinade just before putting on the grill. 

Grill tofu and veggies then cut into 3cm to 4cm pieces on the diagonal.

Combine ingredients for dressing then lightly toss greens and tomatoes in dressing. Place the greens in a large bowl and top with grilled veggies and tofu.

This salad is great on its own or as a side for your favorite grilled salmon or chicken. Enjoy!
