Lower Fat in Your Holiday Meals

Thanksgiving Turkey
-Mashed Potatoes: Use fat free sour cream and skim milk, and sneak in some steamed, pureed cauliflower!

-Gravy: Skim the fat off the top before you serve it.

-Stuffing: Make it outside the bird so that it does not absorb turkey fat, and use chicken broth and a little olive oil to moisten the stuffing instead of butter.

-Turkey: Stick to white meat and avoid eating any skin.

Increase Green Tea's Cancer-Fighting Power

Add just 3 tablespoons of orange, lemon, or lime juice to one cup of hot green tea and increase its cancer-fighting power. These juices improve the stability of the cancer-fighting antioxidants and make them more available for absorption.

 Keeping Lettuce Fresh

1. Keep it cool - Set your refrigerator and produce drawer temperature and humidity controls correctly.  You don't want your refrigerator temperature set low and the humidity high or your lettuce will "sweat" and get soggy, especially if there is water from the leaves already pooling in the produce bag.  Likewise, if you have the fridge set to the coldest setting, and the humidity set too high or the leaves are wet, your lettuce  will frost (which is equally as tragic!).

2. Wrap it up - With leafy lettuce greens like romaine, red leaf or green leaf lettuce, wrap them in a moistened paper towel as soon as you get it home and place it in a plastic bag before storing it in the drawer. You can also try to remove leafy greens and pat the leaves dry with a paper towel before storing them if they are wet from the produce sprayer at the store.  Squeeze the water out from the paper towel and wrap the head of lettuce up.  Place the wrapped head of lettuce back in a plastic  bag and in the produce drawer.

4. Room to Breathe - Store your lettuce in your produce drawer with plenty of breathing room.  Leaves can be easily bruised if you have lots of other vegetables crammed in with the lettuce.

Spinach

It may not be at the top of your awareness, but you might have noticed that along with the change of temperature in the autumn, the air becomes a bit drier. Heaters are kicking on in our homes and offices and drying out the air even more.  First to suffer are our skin and mucous membranes, both of which are major first lines of defense in our bodies. When these get dried out, we are more at risk for contracting viruses and bacteria. A good remedy for this is a simple humidifier in the home or office with a few drops of pure eucalyptus or peppermint oil.  These essential oils are not only antiviral and antibacterial, but also soothe the respiratory tract.

As always, nature provides us with the perfect medicinal foods for dealing with the autumn dryness. Fresh persimmon, loquat, apples and pears are fruits that create moisture in the body.  Other foods that increase body fluids include spinach, almonds, pine nuts, peanuts, sesame seeds and small amounts of honey.  Seaweeds, fresh eggs and dairy products are also effective.

If your body does succumb to one of the many "seasonal" viruses, and you catch it soon enough, you may be able to fend it off.  The age old wisdom of a good sweat really can make the difference in whether the pathogen takes hold or not. At the first sign of  symptoms, grab a few slices of fresh ginger root and boil in 2-3 cups of water for 10-15 minutes. Pour the liquid into a cup and add a little bit of honey if you like. Enjoy this slightly spicy drink before jumping into bed with a lot of covers. The warming nature of the ginger should start a gentle sweat.  Repeat 2-3 times if necessary.

To your great health!

David

Shower Curtains May Emit Toxic Vapors

shower curtain

Waterproof shower curtains made of polyvinyl chloride (PVC) may emit as many as 108 volatile chemicals, some of which are classified as hazardous by the Environmental Protection Agency. The compounds have been linked to damage to the liver, reproductive system and central nervous system. Vapors may linger for up to one month after hanging the shower curtain, and heat and humidity increase vapors' potency.

Avoid buying products made with PVC, which can include some baby toys and building products.
