Are You Ollin?
  

 

Several months ago, Larry and I were in Denver speaking to a group of people. I shared a thought on a word I had recently learned and read about it a book entitled, Aspire, by Kevin Hall. The word is Ollin. You pronounce this word, ALL-in. It is an expression of immense depth that conveys intense and immediate movement. It means to move and act now with all your heart. It means to follow your path in life wholeheartedly...to experience Ollin, we have to get "All in." I love that! When we have a deep desire to pursue our passion we are Ollin. When you move through fear, worry, hesitation and go-for-it because you KNOW it is your destiny to do so, you are Ollin.
 
For me, when it comes to educating in the field of Glycobiology I am Ollin...I KNOW there is a tremendous need for folks to understand this field of science and the implications for our immune systems, so there is no option for me but to be "All-in."  When I asked myself, "If not me, then who?" I knew that I would be instrumental in making a significant difference around the world...that's the power of Ollin!

Nitrate Preservatives and Insulin-resistant Diseases

 

Nasty Nitrates

   

Dr. Suzanne DeLaMonte, a neuropathologist with Rhode Island Hospital reported that human exposure to nitrosamines is likely a root cause in the development of Type 2 diabetes, visceral obesity, and fatty liver disease. Nitrates are often added to processed foods and packaged meats to preserve food flavor and color and prevent salmonella infection. You can find nitrates in ground beef, cheeses, fish, bacon, smoked turkey and ham, beer, and hot dogs. Nitrates are converted in the body to nitrosamines. High doses of nitrosamines are well-known carcinogens. One of the principle toxins in tobacco is a nitrosamine.
 
Dr. DeLaMonte performed laboratory experiments 
demonstrating that very low, limited exposures to nitrosamines found in our food cause Alzheimer's-type brain degeneration, dementia, diabetes, fatty liver disease, and obesity. Adding high fat to the diet made the effects of the nitrosamines much worse.
 
Fresh Before Processed
 
Her recommendation to the public is to avoid processed foods containing sodium nitrate on the label. Also, eat organic foods that are locally grown and eliminate toxic preservatives by eating fresh produce. Anything that is processed to give it a longer shelf-life is going to contain chemicals to kill bacteria. But the side-effects of low dose exposure over a period of years is now a primary suspect in causing insulin resistance which is an epidemic in the United States.

Larry and I are beginning to put together our travel schedule for the next 6 months. We have heard from many of you and are looking forward to seeing you in your communities! We will mostly be home in Colorado until April but do have a couple of short trips outside our city before then. We will post those classes on the website but be sure to return frequently as we will add to the class schedule over the weeks and months as plans get finalized. We are gone more than we are home after April into the spring and summer and the schedule is always fluid as we add classes while en route also. 
 
Let us know if you'd like us to come to your community to teach an introduction to the science of glycobiology class. If we can fit it into our travel, we would love to do it! While the classes are geared towards healthcare professionals so we can springboard them to CME, we encourage the public to attend also. We have been instrumental in getting this education to thousands over the years this way and it has been so very rewarding. Cranberries © Bigjom | Dreamstime.comCoconut Oil is a great alternative, a healthy oil. I recently began incorporating this oil into my recipes which call for butter, vegetable or canola oil. It's surprisingly good and tastes great especially in baking! Check out the recipe in this issue for a yummy treat using coconut oil.

 

There are also many other benefits as it's good for your hair, skin, heart, weight control, digestion, immunity and infections! We may be relatively new to coconut oil here in the United States but in most of the tropical coastal regions of the world coconut oil is commonly used in daily living. You will find this oil in jars and it looks white because it is solid when it is room temperature (no need to ever refrigerate) and it liquefies when it is in temperatures of 76-78 degrees but either way it is good to use in our cooking! Diabetes of the Brain - A New Look at the Cause of Alzheimer's

 

I want to thank our dear friend, Wanda Zinn, for pointing me towards this intriguing information on Alzheimer's and coconut oil. It is fascinating in its implications! Dr. Mary T. Newport, a physician from Tampa, FL, describes in her book, Alzheimer's Disease - What if There Was a Cure? the experience of her husband, Steve, who is battling Alzheimer's.

 

Diabetes and Alzheimer's

 

Most of us are aware that Type 2 diabetes mellitus is caused by the cells of the body becoming resistant to insulin. The hormone insulin signals the cells by docking outside the cell on their glycoproteins. This connection causes a message to travel through the glycoprotein to the interior of the cell and a gene can be turned on or off. This action prompts the cell to take up glucose from the bloodstream. When blood sugar is not taking in properly, cells located on the pancreas generate higher and higher levels of insulin in an effort to get the body's cells to metabolize the sugar. The high levels of insulin can damage the small blood vessels throughout the body but are especially destructive in the brain. When the brain cells become resistant to insulin, the brain cells begin to starve to death. Parts of the brain that deal with memory and personality are damaged and Alzheimer's results. These processes begin at the cell level ten to twenty years before the symptoms of Alzheimer's manifest themselves consciously.

 

Coconut Oil on the Brain

 

Dr. Newport found that by adding coconut oil to her husband's diet, he began to reverse his downward spiral into the disease state. Coconut oil contains medium chain triglycerides that consist of ketone structures. The ketones are able to enter the brain cells through another pathway not requiring insulin and provide the sugar needed for energy production within the cell. Many sugars like fructose are ketones in their chemical structure. So, not only is glucose provided for energy production but the other critical glyconutrient sugars contained within these triglycerides are able to enter the cell and be utilized in the production of glycoprotein and glycolipid structures needed for cellular communication and immune system function. When the cell has the raw materials it needs, then it functions as it was designed to do. Symptoms of disease begin to dissipate.

 

Clearing Coconut Oil's Good Name

 

So, why don't people know about this? Two reasons are mentioned. The first reason was explained by Dr. Beverly Teeter, University of Maryland. She stated that coconut oil gets a bad rap because it contains so much saturated fat. Saturated fat raises blood cholesterol and conventional thinking concluded that was definitely a bad thing. However, scientists and doctors did not know much about cholesterol originally and the conclusion was faulty. There is actually good cholesterol (HDL) and bad cholesterol (LDL). While it is true that coconut oil raises serum cholesterol, it actually increases the good cholesterol which is what we want. Unfortunately, that updated message never got out into mainstream publications so few people know the truth that it is good for us. 

 

Second, there is no real money in producing and marketing natural products. Dr. Kiernan Clarke, Oxford University, has developed a ketone ester solution that has ten times more ketones than coconut oil. Unfortunately, it takes millions of dollars to manufacture it and bring it to market. They cannot interest anyone in taking that on despite the health benefits being documented in the scientific community. So, it will stay in the research laboratory and probably never reach the general public. Fortunately, you can still find coconut oil. Just make sure it is pure coconut oil and contains no hydrogenated oils (trans fats) in it.

 

Glycobiology Abounds, Whether We Know it or Not 
 
While those invovled in this documentary don't know about glyconutrients, their recommendations rest on the recent science of glycobiology. These sugars contained in coconut oil (medium chain triglycerides) are vitally important in supporting our immune system fight against degenerative and autoimmune diseases. We should always eat the types of food that will provide our bodies the necessary raw ingredients for proper function. Plants (vegetables and fruits like coconut) in their most raw and pristine form are always the best food source for us to eat. Plant-based supplements are also a very helpful way to get these nutrients into our bodies because so often we are unable to get enough of the critical nutrients from the food we eat even if we try to eat as healthy as possible. The addition of these critical sugar nutrients (glyconutrients) can make dramatic differences in the quality of life experienced by individuals suffering from diseases related to malnourishment in these critical areas. It seems like a miracle but the science of glycobiology has begun to unravel the processes involved and why the food components of plants have the ingredients that prevent disease in the human body.

Giving the VIP Treatment

 

Taking the time to be with your children in meaningful activities is something that doesn't just happen...it takes concerted effort and planning. It was a "given" that we spent at least one night a week with our little family as they were growing up...we called this "family night." We made it a time where our children could take responsibility for some aspect of the evening, i.e. singing, telling stories, games and refreshments. Everyone had an assignment and could take pride in presenting, sharing, organizing and/or whatever else their contribution entailed.
 
We also had a special chair with a seat cover I made which proudly displayed the letters "VIP." This special chair was for the "Very Important Person" of the week - a name was drawn and that person sat in the chair though out the evening. At the end of our family time together we took turns and went around the room, each saying something special about the person sitting in the VIP chair. Lifting each other in this way ensured our children grew up feeling good about who they were! And, in fact, children will live up to what their parents really think of them - good or bad - so we wanted to be sure they knew, WE KNEW, how very good they were! Children who feel good about themselves will be able to withstand the negative peer-pressure they most certainly will face as they mature. They will be able to stand for right even if they find themselves standing alone. When children grow up knowing who they are, they will become wonderful citizens and contributors of their communities and incredible parents for their own families someday. There's no greater joy for parents (at least for us!) than that.
