Pumpkin Cheesecake

Crust:
  • 1 3/4 cups graham cracker crumbs
  • 3 tablespoons light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1 stick melted salted butter

Filling:

  • 3 (8-ounce) packages cream cheese, at room temperature
  • 1 (15-ounce) can pureed pumpkin
  • 3 eggs plus 1 egg yolk
  • 1/4 cup sour cream
  • 1 1/2 cups sugar
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon fresh ground nutmeg
  • 1/8 teaspoon ground cloves
  • 2 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract

Directions

Preheat oven: 350 F.

For crust:

In medium bowl, combine crumbs, sugar and cinnamon. Add melted butter. Press down flat into a 9-inch springform pan. Set aside.

For filling:

Beat cream cheese until smooth. Add pumpkin puree, eggs, egg yolk, sour cream, sugar and the spices. Add flour and vanilla. Beat together until well combined.

Pour into crust. Spread out evenly and place oven for 1 hour. Remove from the oven and let sit for 15 minutes. Cover with plastic wrap and refrigerate for 4 hours.

Major: Junior with double-major in Psychology and Criminal Justice

Congratulations to Raven on her upcoming two-year anniversary with the Ferguson Center Student Union.  As a student assistant, Raven works hard as "air traffic controller" of The Ferg by manning the information desk, helping students, faculty and staff alike.  In addition, Raven helps with The Ferg's 2E efforts, coordinating assessments and attendance.

Raven aspires to work in the Behavioral Analysis Unit of the FBI and enjoys the investigative work she is able to do on behalf of The Ferg.  Her position at the information desk is one that allows her the opportunity to meet lots of new people, answer often-complex questions and solve students' problems. 

"The Ferg has given me a variety of ways to deal with conflicts and situations in life. I am just grateful to be a part of the Ferguson Center Student Staff and to be able to serve and give back on my campus. It has truly been a great experience working here, and I am looking forward to many more experiences for the rest of my duration at the University and as a Student Staff here at The Ferg."

In addition to her notable work at The Ferg, Raven is an active member of Future Alumni for the Tradition of Excellence (FATE), the National Council of Negro Women (NCNW) and the Correlation of Elite African Americans (CEAA). 

Raven hopes that her dedication to her work and studies can be an inspiration to her younger siblings, Sidney (17) and twins, Jordan and Taylor (13), who are three of the most important people in her life. 


Al's Pals Mentorship Program
Interviews will be held Nov. 15 - 19

The Ferguson Center is pleased to announce the launch of the Al's Pals Mentorship Program at UA. Beginning in spring 2011, University of Alabama students will be paired with 2nd and 3rd grade children living in the McKenzie Court area of Tuscaloosa. In collaboration with the Community Service Center and the office of Student Involvement & Leadership, the Ferguson Center is looking for the first class of Al's Pals mentors for spring 2011.

Applications can be found at http://ferguson.ua.edu/applications.html. All University of Alabama students are encouraged to apply. Applications should be turned into Ferguson 356. When potential mentors turn in their application, they should sign up for an interview time. Interviews will be held Nov. 15, 16, 17 and 19 at the Ferguson Center.

All mentors must commit to 2 hours of mentoring per week either on Wednesdays or Thursdays from 3 to 5 p.m. All Al's Pals mentors will be trained in January and will be provided with continuous support from the Al's Pals program. Transportation to the McKenzie Court Community Center can be organized for mentors if needed.

Share your culture and learn about others at International Expressions events this month at The Ferg. Join the Chinese Culture Club on Nov. 17 from 7 to 8:30 p.m.  in the Ferguson Center East Dining Hall to learn the basics of Chinese Calligraphy.

First African-Americans at UA Share their Experiences
A look at the Panel Discussion on the Early Days of UA's Desegregation

Autherine Lucy Foster, Vivian Malone Jones and James Hood are three brave individuals who took a stand for change at a crucial time in the history of UA. Their courageous strides in 1956 and 1963 marked the beginning of UA's steady progress toward the inclusive and diverse campus we celebrate today.

Mrs. Foster, Mr. Hood and a family member of the late Vivian Malone Jones participated in a panel discussion about UA's early movement toward desegregation. Moderating the event was Dr. E. Culpepper Clark, former dean of the College of Communication and Information Sciences and author of the book The Schoolhouse Door: Segregation's Last Stand at The University of Alabama.
