In their book Now, Discover your Strengths, Marcus Buckingham and Donald O. Clifton state that every person is capable of doing something better than the next 10,000 people. Do you know what your strengths are and are you taking time to develop your gifts so you can reach your fullest potential?

For example if your natural talent in an area is 4, with hard work you may raise it to a 6. In other words you can go from a little below average to a little above average. But let's say you find a place where you are a 7; you have the potential to become a 9, maybe even a 10, if it's your strength zone and you work hard at it. That helps you advance from 1 in 10,000 talent to 1 in 100,000 talent

So, find your strength zone and maximize your talents!

Quick & Healthy Recipes
West African Chicken & Spinach
 
This is one of  my favorite dishes because it is quick, easy and healthy. it can be made in large batches and frozen to be reheated at a later date. You can serve with rice, couscous, pasta or bread.

Ingredients:
  • 1 bag frozen spinach,
  • Uncooked chicken parts
  • Large Onion - Chopped
  • 2 Med Tomatoes - Diced
  • 1 Large Red Pepper - Chopped
  • 1/4  cup Olive Oil
  • 2 Garlic Gloves - Crushed
  • Seasonings
 
Season and sautee chicken with a little oil, spices and crushed garlic in heavy pan. When chicken is done remove from pan and add the rest of the oil and chopped onions. Mix well with the residual stock/drippings from the chicken. When onions are glazed add red peppers and tomatoes. Cook and stir for about 15 minutes until a thick sauce forms. Turn down heat and add spinach. Cook for 2 - 3 minutes. Add the chicken. Voila - Dinners Ready!!

Not too many people in the States know Buchi Emecheta. I started reading her books as a young girl growing up in West Africa. If you are ever curious about the lives of West African women, from being married off early to finding their place and  voice in a Western society, I recommend that your read 'The Bride Price' and 'Second Class Citizen'. The lives of the main Character in Buchi's books closely parallel her own life. Once you get started on this book you won't want to put it down.
