Some years ago, I decided to follow a vegan diet but I found it challenging to create good tasting well balanced meals at home, especially since I really didn't even like to cook. Curiosity, necessity and great timing led me to a wonderful Raw Food Prep Class in NYC. Not knowing what to expect, I arrived with one simple question:
What the heck am I supposed to do with all these vegetables?
I left class that night inspired and empowered with a new passion for food.
