"Love and Then Some"
 
It's February. The month of red roses, hearts, cupids and and romance. The holidays are over, the resolutions are either well underway or well put away, and we can all breathe a collective sigh of relief. Sure, the emphasis on romance and passion can be a bit tiresome. So instead, place the spotlight on a few different aspects of love. Things like random acts of kindness. Or the importance of being loving to oneself. Make February your excuse for a little self-indulgence. Go get that massage or a spa treatment that makes you feel so decadent!  Even better, treat your favorite person to one too!

Often in the spirit of love and balance, we realize that it's a time for self-sacrifice instead.  Maybe a commitment to be kinder to animals by going vegan for a while might be a right decision for you now. With all the horrible things going on in our mass produced food industry these days, you may feel helpless about making a positive impact. It's as simple as quietly stepping out of the equation. Just say no. I can help.

Savory White Beans

(delightful scents will be wafting through your kitchen)
 
INGREDIENTS
1 1/2 cups dried navy beans or great northern beans (soaked overnight), 2 Tbs extra virgin olive oil, 2 onions finely chopped, 8 garlic cloves thinly sliced,
5 sprigs of fresh sage, handful of fresh thyme sprigs, 1 bay leaf, 2 tsp fresh lemon juice, freshly ground black pepper

DIRECTIONS
Drain and rinse the soaked beans. Discard soaking liquid. 
On the stovetop, simmer beans in 8 cups of water partially covered for about 1 1/2 hours or until beans are soft. Season with salt to taste. Let the beans sit in the cooking liquid for a few minutes to absorb the salt. Drain the beans. Reserve the cooking liquid.

Warm olive oil in a medium saucepan. Add onions and cook over medium-low heat for about 10 minutes or until soft and starting to brown. Add garlic and cook a few minutes more, until fragrant. Add the cooked beans and 2 1/2 cups of the reserved bean cooking liquid.

Tie the herbs together with cotton string and add to beans, along with the bay leaf. Cover, bring to a boil over medium heat, reduce heat and simmer partially covered for 15 minutes to allow flavors to marry. Add the fresh lemon juice, and salt and pepper to taste. Remove bay leaf and herbs.
 
This is very yummy. Canned beans will do, but the fresh herbs really make the difference. Serve with fresh crusty bread and roasted asparagus on the side.

I found this recipe in The Voluptuous Vegan by Myra Kornfeld and George Minot. It's truly one of my favorites. Hope you enjoy too!
