Celebrating Rushton Long Table
Over 160 people gathered on June 2, 2012 to celebrate the completion of the 80-acre Rushton Woods Preserve and those who made it possible.

Cocktails at the farmshed featured local wines and 15 cheeses from six Chester County dairies.

Two 100-foot tables were set on the hill in the meadow for a beautiful dinner featuring ingredients from Rushton Farm and growers within 50 miles.

Guests enjoyed a full moon and dancing under the stars to Ward Marston.

Beautiful Rushton Farm

We are off to a great start this season with the spring harvest being hearty, healthy and plentiful. The weather has been good and our crops are flourishing.  

 

The weeds have not established a hold and the rain has been frequent enough to maintain the crops without much additional irrigation. It is the perfect time of the season when a farmer can look out at fields full of promise and food ready to be picked.

 

There are many stages in a farm season and mid June is one of the highlights. I would encourage Rushton Farm CSA members to take a moment and walk the farm during your pick up this week.  

 

Those of you who visited the farm during our "Meet the Farmer" event in late April will be able to appreciate the transformation of the farm over the past month and a half. Members can see crops that are at peak production and newer plantings just beginning to grow.  

 

Part of understanding the value and importance of local food is seeing where and how the food is grown and the fields of Rushton Farm are an ideal place to learn. The Rushton Farm Staff is eager to share their knowledge and answer any questions you may have so please take the opportunity to look around and share in the beauty of our community farm.

Kids Love Getting their hands dirty at Rusthon Farm

Check out the Rushton Farm 2012 CSA Manual. This manual was compiled to help our members understand more about the food being offered in the share each week and how to store and prepare it.  

 

We are constantly updating and adapting our crop list so not everything we grow at Rushton is featured in the manual but it is a valuable resource for the majority of food you will find in your share over the upcoming months.

 

A note on the garlic in your share this week. It was just harvested and has not been cured so the flavor will be strong but wonderful. Enjoy.

Kohlrabi, Beet and Apple Slaw
RECIPES what to do with all those veggies  
       

Thai Chicken Salad with Bok Choy and Rice Noodles

 

4 1/2 ounces rice stick noodles (maifun)*

4 large garlic cloves

1/4 cup soy sauce

1/3 cup fresh lime juice

2 tablespoons sugar

1 tablespoon smooth peanut butter

2 teaspoons chopped peeled fresh ginger

1 1/4 teaspoons hot chili paste (such as sambal oelek)*

1/4 cup vegetable oil

3 purchased roasted chicken breast halves, boned, skinned, shredded

3 cups shredded Napa cabbage

1 cup coarsely grated carrot

1 cup red bell pepper strips

1/2 cup thinly sliced red onion

2 medium cucumbers, halved lengthwise, thinly sliced crosswise

1/3 cup coarsely chopped roasted salted peanuts

 

Cook noodles in small pot of boiling salted water until tender, about 3 minutes. Drain; cut noodles in several places with scissors. Spread out on platter.

 

Puree next 7 ingredients in blender. With machine running, gradually add oil and blend until dressing is smooth. Season to taste with salt and pepper.

 

Combine chicken, cabbage, carrot, pepper, onion, and cucumbers in large bowl. Toss with enough dressing to coat. Arrange atop noodles, sprinkle with peanuts, and serve, passing remaining dressing alongside.
