Greetings!
Thank you to everyone who helped us make our second annual Winter Coat Drive a success! We were able to donate several bags of warm winter clothing to a local homeless shelter thanks to your generous gifts. We have also donated a portion of our December sales to Habitat for Humanity. THANK YOU to everyone who participated in these two important holiday drives!!!

Water, Water Everywhere...

...But what type should I drink? We all know drinking water is not only good for us, but necessary for our health. But what TYPE of water should we be drinking? Is tap water safe? What about bottled water? Should you use a filter and if so, which kind?
This is a perplexing issue without a lot of obvious answers. Our tap water is not pristine yet bottled water may be nothing more than tap water, not to mention its negative environmental impact. Filters can be expensive, and are they really doing anything anyway?
Thankfully, the trusty researchers at the Environmental Working Group have decided to tackle this issue head on and have provided some scientifically-based, realistic guidelines on drinking water.

Welcome, Meghan!

Those of you who have stopped by the office or called in the past few weeks might have run across a new face and voice in our front office.
We wanted to introduce you to Meghan Kelley, the newest addition to Lewis Family Natural Health. You will most likely run into her in the mornings, while Judy will still be around most afternoons. We're very excited to have her at our office!
Here's a little more about her (in her own words):
"I am the newest member of the Lewis Family Natural Health team. I started a few weeks ago and I am really enjoying getting to know not only Dr. Eric, Dr. Kristina, and Judy, but the patients as well.
I graduated from the University of the South in Sewanee, Tennessee in 2007. I am currently a graduate student at Western Carolina and working to attain my Masters in Health Sciences with a concentration in Management.
I have always been interested in Naturopathy and feel so lucky to learn from Dr. Kristina and Dr. Eric. I actually plan on doing my Thesis on Homeopathy and could not ask for a better source!
I recently became the proud mom of a new rescue puppy, Nugget."

Fried "Rice" Quinoa Recipe

This recipe was created by our newest employee, Meghan.
This is a flexible recipe so feel free to play around with
the ingredients and amounts!
Ingredients: - Quinoa (half of a box for this recipe)
-
2 Tbs. coconut oil
-
1/3 cup chopped onion
-
¼ tsp. red pepper flakes
-
1 Tbs. sesame seeds
-
2 carrots chopped
-
2 cloves garlic minced
-
3/4 cup fresh or frozen broccoli
-
1/3 cup frozen peas
-
3 Tbs. low sodium soy sauce
-
½ tsp. sesame oil
-
1 egg whisked
Cook half a box of plain quinoa according to package directions and set
aside. In a large skillet heat coconut oil over medium heat and add the onions,
red pepper flakes, and sesame seeds. As the onions start to soften, add the
carrots, garlic, and broccoli. Once the broccoli is bright green and cooked,
add the frozen peas, soy sauce, and sesame oil. At this point create a well in
the middle of the ingredients, add the egg and scramble in the middle of the
pan. Once the egg is cooked, mix it in with the vegetables and add the quinoa.
Toss a few times, taste for seasoning and enjoy!
*Add tofu or chicken to make it a full meal!
