Summer Recipe:  Almond Pesto Rice Salad
This recipe comes from Dr. Mary Bove, ND, and is filled with summertime herbs and veggies.

Almond Pesto Rice Salad
  • 2 cups brown rice
  • 3.5 cups water
  • 3/4 cup almonds
  • 1/2 bunch parsley
  • 1/2 bunch fresh basil
  • 2 cloves garlic
  • 3 Tbsp lemon juice
  • 3 Tbsp olive oil
  • 1/2 cucumber, cut in quarter moons
Bring the rice and water to a boil, turn down the heat, and simmer for 45 minutes. 

In the meantime, add together the remaining ingredients (except the cucumber) and puree them together in a blender to create a fresh pesto sauce.

Put the cooked rice in a bowl to cool.  While still warm add the pesto sauce and continue to cool.  Add cucumber to the rice/pesto mixture once cool.  Adjust seasoning and enjoy!
