A major health concern has
recently been raised regarding a component of plastic bottles and canned foods. This has been big news these past few weeks as major names such as Nalgene scramble to let the public know if their products are safe or not.
We have been asked a number of questions
about this subject since the NIH (National Institutes of Health) concluded that
a chemical called BPA poses several health risks.
BPA is used in the manufacturing of hard plastic water bottles, metal food can linings, and canned infant formula. Recent reports show that it may pose hormonal risks on children and adults alike.Although completely
eliminating exposure to BPA may not be possible, there are steps you can take

Preventing Childhood Diabetes

Diabetes affects nearly 7 percent of
people in the United States, and 90 to 95 percent have type 2 diabetes.
This form of the disease used to be called "adult-onset diabetes" as it
used to only happen in older adults, 80 percent of whom were
overweight. With the rates of childhood obesity on the rise, however,
more and more children and adolescents are now receiving this diagnosis.
One of the best ways to prevent type 2 diabetes in children is to prevent childhood obesity, and recently published research suggests breast-feeding infants could help reduce the risks of both.

Smashed Broccoli

This recipe was shared with us by Heather C. in Charlotte.
Smashed Broccoli
- 2 tablespoons extra-virgin cold pressed olive oil
- Pinch of red pepper flakes
- 5 garlic cloves, coarsely chopped
- 1 bunch broccoli (about 1 pound, including stems, coarsely chopped)
- 1 cup Chicken Stock
- 1/2 cup plain yogurt
- Sea salt and freshly ground black pepper
Heat the olive oil in a medium pot; add the red pepper flakes and garlic. Throw in the broccoli and toss to coat in the garlic and oil. Pour in the chicken stock, cover, and let the broccoli steam for 10-15 minutes. When it is soft, pulse the broccoli a few times in a food processor or you can use a potato masher and smash by hand. The broccoli should be partly smooth and partly chunky. Stir in the yogurt to give the the broccoli a little richness and slight tang and season with salt and pepper.
