Whew! What a Bash!

Thank you to all of you who helped us celebrate our 4th Anniversary, May 1st! It turned out to be an awesome venue with tables and chairs generously spaced inside the large well-lit and air-conditioned Dole Cannery Mall area to accommodate almost 70 people. Steve Jones, our jazz bassist, and a recording engineer was relieved that there wasn't an echo in the place. Satomi Yarimizu, piano, Darryl Pelegrini, drums and DeShannon Higa, trumpet, sounded great!
Our menu was to die for! We had starters/fun pupus like Spicy Sri-Lankan Coconut Dip on strips of Pumpkin Seed Bun, No-Bean Hummus with sliced cucumber, Cuban Kim Chee Krunch, and Macho Nachos with Guacamole.

There were three salads: No-Grain Tabouleh with Avocado and a Sweet Sour Tahini Sauce (with Flax Seed Thins), A Baby Arugula Salad with Greek Olives, Organic Wow Tomatoes and a Balsamic Garlic Sauce, and a Green Leaf Lettuce Salad with Sumida Watercress, Kahuku Golden & Red Beets and our House Dressing.

Colorful entrees like Bean-less Bean Burritos, Spanish Rice, Not-Tuna Salad Sandwiches and Living Lasagna rounded the menu, and finally, rich sweets like Wicked Chocolate Tarts and Coco Choco Truffles made the evening complete alongside our strawberry, goji berry kombucha beverage called the Love Potion. People brought their own bottles of wine and it was a great party!

This is a turning point in the business as our lease expires in December. I see the upcoming years as a time to train the next generation of Licious Leaders. So, this month, instead of having a class, I plan to hunker down and hopefully complete my recipe book so I can spread some Licious far and wide.
