Our first daffodils and sweet peas have bloomed! Not very many but it's a sign of all the wonderful Spring things on their way. It's been a strange last few weeks..no rain, cold nights and warm days. We can tell the plants just aren't sure whether to grow or stay put. Everything will really start to grow as the days lengthen--chickens start better egg production, flowers bloom and vegetables seem to grow overnight. Until then, the luminescent full moon out the bedroom window wakes me up and I take deep sweet breaths of cold January air.
This weeks ingredients have a battery of goodies in them for fighting winter colds and chills. Be sure to utilize your Italian parsley..it's full of Vitamin A. We've seen the end of our juicing Valencia oranges and have our first Navel oranges. These still have good sweet flavor, lots of Vitamin C and are to be peeled instead of juiced.
The only item you may not be familiar with is the Kabocha squash. For those of you that sent notes on how much you enjoyed the butternut squash, you may find this is even sweeter and better. Lots of ways to cook but the simplest and easiest is to slice, dose with good olive oil and a little salt and bake in the oven until tender. If you haven't had this variety before, I think you'll be pleasantly surprised.
