Trash talk: Zero waste and sustainability for the food industry

Join renowned Chicago caterer Greg Christian in a discussion of how he achieved zero waste in his kitchen and strategies for how other food industry professionals can, too. Christian has come to be known as "Chicago's conscious caterer" by being the first chef in the city to see that through reuse, recycling, and repurposing, nothing in his kitchen is thrown away. Small manufacturer's energy tune up
Wednesday, January 14
Find out how you can spend less on electric and gas for your small business. Engineers from the University of Illinois at Chicago will host a walk-through of systems at ICNC member Standard Steel and Wire to show attendees how to cut costs on:
- Lighting
- Compressed air
- Boilers and steam
- Motors
- HVAC
- Energy purchasing
Attendees will learn how to measure the energy their systems use, and will receive easy-to-use software to calculate return on investment for upgrades and find out about financial assistance for energy improvements. City council passes dumpster permit fee
Expect higher garbage costs soon. Next year's city budget includes a fee for new permits on dumpsters for businesses and multi-unit residential buildings. Your private waste hauler will be charged an average of $300 per year for each dumpster.

Buildings commissioner visits ICNC
Department of Buildings commissioner Richard Monocchio came to ICNC November 20 to discuss local companies' experiences with permitting and inspections. DOB has recently implemented changes in how they approve and inspect projects and the Monocchio pledged to work with ICNC and local companies.
