Tomorrow is the first day of September and most schools have started back, the kids are off to college, the pace seems to pick up at work and if you're like us you can hardly believe the summer is over! We've had a great summer at the Inn and are looking forward to another beautiful fall in the north Georgia mountains. In this issue, we've highlighted some of our events and packages, including a special zipline package we put together with Sunburst Stables and Zippity Dude Ranch for the upcoming Labor Day holiday. We had a chance to try the ziplines out ourselves with our two boys (see Edward's acrobatics pictured in the article) and it is a fantastic experience, starting with a really fun ride in an old war vehicle that leads to the top of the ridge and the progression of 5 ziplines down the mountain. We have a couple of rooms remaining for our marriage retreat on September 10-12, which is sure to be a powerful experience whether you are new in your marriage or have been together for over 40 years. And finally, Chef Patrick shares some tips for using summer fruit. We hope you have a great fall season, and hope to see you at the Inn soon!

What's Cooking with Chef Patrick

With the abundance of fresh fruit, vegetables and herbs summer provides, we are always looking for refreshing ways to incorporate nature's bounty in our recipes. A really versatile summer fruit is the fig. One of my favorite recipes incorporating the fig is my Fig and Mushroom Sauce. This sauce is perfect when served over a puff pastry entrée we call "Beggar's Purse" a delectable use of fresh vegetables and herbs as well. Like other fruits, when figs are harvested, it's best to preserve them by freezing or using a canning process so as to enjoy them year round. Strawberry salsa, pesto cream sauce, basil aioli, smoked tomato sauce, and peach chipotle glaze are a few of our other favorites. Recipes for some of the above are available in our new cookbook "A Taste of Glen-Ella Springs Inn" and you can find the Fig and Mushroom Sauce recipe on our website www.glenella.com.
I am in the process of developing a few new desserts for the restaurant and one in particular I have planned to offer in the coming weeks, I've named "Pear Way to Heaven", a pear pie with Gruyere cheese baked into the crust. Sounds heavenly, right?
Whatever fruits, vegetables or herbs you have available, we encourage you to experiment and expand your use of them while they are so plentiful.

Thanksgiving Day Buffet
|

Reservations are coming in for our Thanksgiving Day Buffet. This annual event always books up early. Please call 706-754-7295 for reservations. Hours are 11:30 - 4:00 with reservations taken on the half hour. Cost is $32.50 per person (plus tax and service fees). Children 12 and under are half price.
