How to Coordinate Undertones in Tiles and Countertops

In my True Colour Expert Training last month a participant asked a really good question. "Okay so now I can see the undertones and I get it, now what?"
My system of distinguishing undertones breaks it down in such a way that you can take any fabric or tile and say "this is yellow beige, or pink beige, or green beige," etc.
So great, now that you can distinguish it, what are the 'guidelines' to getting the undertones in your fixed finishes right?
