Fresh Asparagus Soup

asparagus soup
Asparagus is fresh and in season and available at farmers markets.

The following recipe came to from my friends at First Kitchen Cooks.

If you follow the recipe it will make 4 servings. Aside from being delicious is that it doesn't take long to make. It will be ready in less than 30 minutes.

1 tablespoon olive oil
¼ cup chopped shallots
1 clove garlic, pressed or minced
½ cup thinly sliced carrots
1 medium potato, cut into ½ inch cubes
1 teaspoon salt
½ pound asparagus, cut in 1-inch pieces (about 2 ½ cups)
1 teaspoon fresh thyme
1 tablespoon lemon juice
4 cups chicken broth
½ cup frozen or fresh peas
Salt and pepper to taste
1 slice cooked bacon, chopped (optional)
Plain yogurt (optional)

Heat oil in medium-large saucepan on medium heat; add shallots and garlic and sauté for 3 minutes.  Add carrots and potatoes and sauté 10 minutes, stirring frequently.  Add asparagus, chicken broth, thyme, lemon juice and simmer about 15 minutes. Stir in peas and simmer another 5 minutes; salt and pepper to taste. Serve.  Garnish with a dollop of plain yogurt and a sprinkling of bacon bits.

5 Green Gift Ideas I love

Anniversary or Birthday coming up and stuck on what to get? It's easy being green now more than ever to celebrate those special occasions. Ecofriendly gifts are generally more creative and distinctive than traditional ones and shows you really put some thought into it.

1. Wine and Dine 'Em...Organically
Treat your tastebuds at a restaurant specializing in seasonal, regional cuisine. Or even better visit your local farmers' market and gather the ingredients for home-cooked meal or romantic picnic.

2. Rethink the Flowers
Celebrate the occasion with a rainbow of flowers from a farmers' market, CSA, or natural-foods store. If you can't find any locally, try Organic Bouquet, Diamond Organics, California Organic Flowers, or other online purveyors of pesticide-free petals. Or give your sweetie a lasting reminder of your sentiments: a beautiful house plant. Depending on where you live, your local Farmers Market may offer a farmer who has a variety of plants, both floral, herbs and fruits alike to give your loved one.

3. How Well Do You Know Them?
One of my favorite things to do is think about the person specifically and what their likes & hobbies consist of. If your significant other likes massage and doesn't indulge themselves often you can give them a wonderful massage with organic lotions and dress the house up to impress. Or pick a local massage studio and get a couples massage. Use this date as an opportunity to bring out your creative side. Make a card from objects found around the house, paint a picture for your loved one, or make a scrapbook of your memories together.

4. Look Behind the Shine
Vintage jewelry is a great choice for romantic souls who don't romanticize the environmental and human-rights problems associated with mining diamonds and gold. For a bold (and not necessarily bank-breaking) statement, consider a distinctive piece made from recycled metal, paper, or other repurposed materials.

5. Double Your Pleasure
Shared experiences bring lovers closer together, and a rustic weekend getaway, cooking or dancing classes, or tickets to a concert or play is a gift for you too.
