Not too many years ago, Redfish were considered 'trash fish'. I can remember my dad catching them in the creeks around Murrell's Inlet, S.C. and shaking his head in disgust, because those dang redfish were stealing the baits that were intended for doormat sized flounder.
For decades, these backwater bruisers cruised the flats, jetties, beaches and bayous virtually unmolested. Then along came a Louisiana chef named Paul Prudhome who started serving Blackened Redfish at his restaurant K-Paul's in New Orleans. At least, that's the way it was told to me. Suddenly the 'trash fish' became a much sought after piscatorial palate pleaser.
Anglers began to realize these bronzed backed behemoths put up a pretty good fight and soon Redfish Tournaments sprouted up all across the southern U.S. coastline.
The rest is history. Today, Redfish Tourney's carry high purses and draw anglers from all over the continent. Redfishing has gone crazy.
This Sunday, take a trip with Capt. Cefus and Capt. Rick Hiott in the tidal creeks of Charleston, S.C. in pursuit of redfish. If you've never hooked into one of these tenacious critters, you have missed out on a great time. FANTASTIC FLOUNDER!!!
If you think about it for a second, you get four nice filets off a flounder... two on the top side and two on the bottom side. Catch a 'doormat' flounder and you're feeding the entire family with just one fish. Everyone has probably had it fried or broiled, so here's a new twist for these tasty filets you can do --- it's a recipe that is part broiling, part poaching and its ALL good !!! 
Chef James prepares this recipe with flounder, but redfish, speckled trout, triggerfish, and spadefish filets will all work equally well. And you can bet a pan full of crappie filets would be off the charts. It's definitely worth trying out.

HIGH SPEED BLUEWATER TROLLING
While you're on the way to your fishing spot, you're covering a lot of territory, sometimes miles of it. And it's entirely possible that you're traveling over a lot of fish that would bite your hook -- given the option. So, never pass up an opportunity.
