Got a ton of zucchini in your garden? Sick of making zucchini bread to use it all up? Try out this delicious recipe that utilizes this seasonal veggie.
Zucchini Fritters
5-6 medium zucchini, trimmed
1 1/2 tsp. salt, divided
6 1/2 tbs all-purpose flour
1/2 tsp baking powder
1/2 tsp fresh ground pepper
1/4 c. Ipswich Original Ale
1c. package soft fresh goat cheese, crumbled
1/3c. (or more) EVOO
1. Coarsely grate zucchini into large collander. Sprinkle with 1 tsp salt to coat. Place collander over large bowl and let stand for 30 minutes. Press on zucchini with kitchen towel to release as much water as possible.
2. Whisk flour, baking powder and salt & pepper in a medium bowl. Mix in the Ipswich Ale, and then the zucchini. Stir to coat evenly (batter will be thick). Mix in cheese.
3. Heat 1/3c. oil in large skillet, about 2 minutes. Working in batches, drop batter by 1/4 cupfulls into skillet and flattening into 3 inch rounds. Saute until brown, 4-5 minutes. Transfer fritters onto baking sheet to cool. Repeat with remaining batter.
4. Enjoy with a cold pint of Ipswich Original Ale!
