Panko Crusted Chicken in a Mustard-Maple Pan Sauce
This recipe is delicious, and perfect for the Fall. The recipe calls for panko bread crumbs, but I breaded the chicken in flour and herbs and it tasted great. Enjoy it with a cold Ipswich Ale.
Ingredients:
2 8-ounce skinless boneless chicken breast halves, cut crosswise in half
1 large egg
1 tablespoon finely chopped fresh Italian parsley
2 teaspoons plus 2 tablespoons Dijon mustard
1 cup panko (Japanese breadcrumbs)
2 tablespoons olive oil
1 cup low-salt chicken broth
3 tablespoons pure maple syrup
1. Whisk egg, parsley, and 2 teaspoons Dijon mustard in large bowl. Place chicken in egg mixture; turn to coat. Sprinkle chicken with salt and pepper. Dip each chicken piece in panko; turn to coat.
2. Heat oil in large skillet. Cook chicken until browned and cooked through, about 4 minutes.
3. Meanwhile, whisk broth, syrup, Ipswich Ale Mustard, and remaining 2 tablespoons Dijon mustard in glass measuring cup.
4. Transfer chicken to plates. Add broth mixture to skillet and reduce to about 3/4 cup, stirring occasionally (takes about 4 minutes). Serve alongside chicken and enjoy!

Thanks again to all those who braved the elements and made it out to Green Meadows Farm for our annual Harvest Fest! Though it rained all morning, we were lucky enough to have some dry weather in the afternoon. Ipswich Clambake and Tennessee's BBQ wowed the crowd with their food, The Orville Giddings Band got down, and good times were had by all.
With October at our heels, we look forward to November, which brings our Winter seasonals, many a beer festival and of course, THANKSGIVING!
