Stout Beef Lettuce Wraps
1 lb ground beer ½ cup sliced green onions 1 clove garlic, minced
2/3 cup chopped water chestnuts
1/2 cup red bell pepper, chopped
1/4 cup Ipswich Oatmeal Stout, OR
1/4 cup Choate Bridge Imperial Stout
2 tbsp. hoisin sauce
1 tbsp soy sauce
2 tbsp. fresh cilantro, chopped
1 or 2 heads leaf lettuce, separated into leaves (discard outer leaves)
1. Brown ground beef in medium skillet, drain fat. Add onions and garlic. Cook until tender. Stir in water chestnuts, bell pepper, stout, hoisin, and soy sauce. Cook, stirring occasionally, until bell pepper is tender and most of the liquid has evaporated. Remove from heat.
2. Stir in cilantro. Spoon ground beef mixture onto lettuce leaves; sprinkle with additional hoisin sauce, if desired. Wrap lettuce leaf around ground beer mixture and enjoy!

The Ipswich Ale Brewery |

It is official! We closed on the new brewery property in mid-January, and have already started the demolition and excavation process. The demo crew has been working round-the-clock on the old Soffron building, and the Ipswich Fire Department has even been by to do some search & rescue practice.
We do not estimate production to begin at the Ipswich Ale Brewery until summer 2009. In the meantime, follow along with the construction and progress of the new brewery by checking out our new Ipswich Ale Brewery Blog. Photos of the construction site are posted daily.

| The Soffron Building |

The building that will be the future home to the Ipswich Ale
Brewery has an interesting history rooted in the town of Ipswich.
From 1938 until closing its doors in 1988, the building was home to Soffron Brothers Clam Company. The Soffron Brothers were credited with inventing the fried clam strip that was sold exclusively to the Howard Johnson restaurant chain.
Prior to Soffron Clam Company, the building was the site of Burke Heel Company. In 1933, the building was nearly destroyed in a
fire, and there is no information on when the building was rebuilt.
The original brick structure that is pictured in the center of the rendering of the new brewery is being kept intact and will be the
site of the Ipswich Ale Brewpub. This portion of the building dates back to 1880.

| Choate Bridge Imperial Stout |
|
Russian imperial stout was originally brewed to satisfy the Czarist courts. Because it was transported across the freezing Baltic from England, imperial stout was brewed with a high level of alcohol. Our Ipswich Imperial Stout may not be sailing over the Baltic Sea anytime soon, but the rich, flavorful, deep chocolate color and flavor will remain true to the style. The use of roasted barley gives this hearty ale its subtle coffee aroma and taste.
Availability: Winter 2009 only
ABV: 8.2%
Distributed in Massachusetts in 1.5L wax-dipped Magnum bottles.
