| Recipe of the Month:
Cod With Beer |

2 lbs. Cod fillets
1/2 tsp. salt
pepper
1 lbs onion
4 tbsp. butter
1 bay leaf
1 cup Ipswich Ale
1/2 cup bread crumbs
butter to finish
Preheat oven to 400 F. You will need a frying pan and a casserole dish. Skin fillets, season with salt and pepper. Peel and slice onion, fry in butter, pour in beer and bay leaf, heat and boil fiercely to evaporate alcohol. Pour into casserole and lay the fish on top. Scatter a layer of fresh bread crumbs over the top. Dot with butter.
Bake for 20 to 25 minutes, until the fish is cooked and the topping is crisp.

Our condolences go out to Merrimack Valley Distribution Company, our local distributor who endured a fire outside their warehouse in February. Luckily no one nor any product was harmed, but one of the casualties included an Ipswich Ale delivery truck! |
