It is always reassuring to talk to business owners who are moving forward on new products and new markets during these tough economic times.   Is it business as usual?  No,  it is more prudent, but it is still all business and gives me comfort and confidence in our members and the industry as a whole.

This month, the annual Crab Connoisseur tour takes place to Unalaska/Dutch Harbor.  This is an annual opportunity for leading commercial buyers and chefs seeking to go directly to the source, over 800 miles west of Anchorage and see the harvest, process and distribution of product they will be preparing or selling.

Below you will read about the expansion of the Professional Culinary and Baking Program in Seward, the path that J&R Fisheries is making directly to their markets and the new traffic lanes that Carlile Transportation is making, over the road, for shipments of dry and perishable products.      

Maybe the challenges of doing business from Alaska works to our advantage in tough economic times.  These businesses are used to creating solutions in adverse environments.    They are used to pivoting in response to their environment - so it does seem like it is business as usual for Alaska's supply chain.

Alaskans Distributing Alaska's Marine Bounty With Pride

You may remember the menu item of Gulf of Alaska Sablefish at Global Food Alaska 2007 offered by Rhonda and Jim Hubbard.    It was a relatively surprising new dish to many of the guests, because Sablefish often plays a less then prominent role that as a "center of the plate" option.   It was a hit, as promised.  Rhonda takes her role seriously as a somewhat unofficial ambassador for Alaska Sablefish as a healthy and appetizing seafood option.

Rhonda Hubbard operates J&R Fisheries, the distributor for the Fishing Vessel Kruzof.    The F/V Kruzof is at the core of the family business and operated by husband Jim Hubbard.  The F/V Kruzof is a longliner that primarily harvests and processes Sablefish (Black Cod) and Halibut from the Bering Sea through the Gulf of Alaska to Southeast Alaska.   The family business from harvest to market is a professionally operated, fully integrated Alaskan company with some unique advantages for those seeking to source Alaskan seafood.s.

AVTEC Welcomes New Teaching Kitchens To Meet The Market

The Alaska Culinary Academy, part of the Alaska Vocational Technical College in Seward, offers a 10 1/2 month intensive program for students seeking training and placement in a wide variety of culinary positions.    

The program will soon be experiencing some exciting changes with the construction of 3 new training kitchens and a brand new classroom to support employers demands for a consistent and skilled labor force.

The supply chain of food into and out of Alaska, whether seafood outbound or inbound perishables has a pretty well established air and sea system that we have highlighted in earlier issues of Collaborative INSIGHTS.    However,  the less "sexy" road system - the Alaska Canadian Highway (Alcan) - has consistently been used to provision Alaska since it was built in 1942.

National Push Needed for Seafood Byproduct Utilization

DeltaWe landed upon the report of a recent presentation given by Steve Dillingham, Principal of Strategro International on seafood byproduct utilization and dug a bit deeper.     His company seemed at the cutting edge of a number of initiatives of interest to Global Food Collaborative members and Collaborative INSIGHTS readers.   I was especially interested in his companies work in maximizing the bounty of the marine environment as that is a focus of Global Food Alaska and many initiatives in Alaska.

We encourage you checking out Mr. Dillingham's comments on byproduct utilization in the US, as well as his companies experience in cluster development (definition at end of article), neutraceutical, cosmeceuticals, functional ingredients, marine products and biotechnology.   We encourage your engagement and comment to the article.
