Happy 4th of July
4th of July 2 Pagosa Springs comes alive for the 4th of July and its population swells to the largest size of the year. We have a wonderful small town parade, carnival, Red Ryder rodeo, craft show, fireworks, tubing on the river, and of course lots of well organized and not so well organized picnics. It is in my opinion the best place in the world to be for the freedom celebration.

Guess I could be wrong and that maybe where you are is the best place. We hope your picnic, whether well organized or not, is a day of great fun and family. And best of all, we hope a GrassRoots burger or steak is the menu this 4th - it just doesn't get any better than that!

Any of you involved in gardening? Allan helped me set up a wonderful greenhouse this year. While it is small (only 7 ft by 10 ft) it has raised beds and a water tank with goldfish and water vegetation floating on the surface. We also put in a raised bed garden area outside of the greenhouse with a PVC frame and optional canopy over the top for protection from our occasional but very destructive hailstorms.

Gardening in southern Colorado is quite the challenge because we have such a short growing season and very unpredictable weather. The nights get cold even in the summer so vegetables have to be very hardy and determined if they are going to grow to an edible size. I am hoping that my new greenhouse will allow me to accomplish what in the past was a bit too challenging for this wannabee gardener. If you have any gardening stories we would love to hear them. Pagosa Springs Farmers Market
Farmers Market The Pagosa Springs Farmers Market will be starting on Saturday, July 10th, and as usual there will probably not be a lot of produce for the first few weeks as folks are praying for more sunshine and warm days to get the crops ready for sale. Allan and I both love to work the market because it is such a nice opportunity to interact with our customers as well as listen to feedback and suggestions.

If you live in Pagosa, or are going to be visiting our area, the market is on Saturday mornings from 9:00 A.M. to 1:00 P.M. in the Ponderosa Lumber parking lot west of downtown on Highway 160. Please stop and say hello - and of course be sure to check out our market specials!

Many of you have ordered our Flank Steak for fajitas and have reported back that you are loving it. While there is no doubt that Flank Steak does make great fajitas, a less expensive and wonderful alternative is to use Top Round Steak, or even our Tenderized Bottom Round. I personnally love using these cuts and have served up some pretty amazing fajitas at times.

This past week I presliced all of the meat and then marinated it in my fajita seasonings. I drained the meat, tossed in some olive oil, and then grilled it in my wonderful grilling basket that I purchased from Bed, Bath and Beyond (see previous newsletter). I next grilled the vegetables, after tossing them with a touch of seasoning, some garlic, and some olive oil. When they were nearly done I added back the meat, tossed it all together, and filled up the tortillas. Yummy! July Specials
Speaking of fajitas ..... sounds like a perfect time to put the Top Round Steak and Bottom Round Steak on sale! Top Round Steak is usually $6.99 per pound, but this month you can get it for only $5.79 per pound. Bottom Round Steak, so conveniently tenderized, is normally $5.99 per pound, but this month we are offering it at $4.89 per pound. At these prices you can use the savings to offset that freight, so be sure to take advantage and stock up.

A little known secret is that Oxtail makes the best vegetable soup ever (to compliment those fresh garden vegetables), so this month we are running our Oxtail at $2.99 per pound, a savings of 25% off the normal price of $3.99 per pound. Like Beef Tongue? How about Beef Tongue at $1.99 per pound, a savings of 50% off the regular price of $3.99 per pound - while supplies last. Don't wait too long to take advantage of this one as supplies are very limited.

In Closing ...
Many of our rights have been taken away by supposedly well meaning folks who do not seem to understand that freedom means we will not always be happy with the choices others make but that is the true cost of freedom. It also means that we not only have the right to make choices that affect us and those around us but also the responsibility to respect the rights of others, whether we agree with them or not. As we celebrate this 4th of July we thank God for all the freedom that we have and ask that if we have in some way abused the rights of others that we would become aware and be inclined to change those behaviors.
