Ah, it's June.  If you know anything about gardening then you know  June is the best month for tomatoes.  I love tomatoes.  From where I stand I have the best view of our lush vegetable gardens. I pass by the tomato section daily, just waiting for them to turn from green to orange to RED!  I circle the garden several times waiting for just the right moment to tip toe in and snatch a few for myself.  I'm always a minute too late. Chef Jeremy Langlois always slips in just before me and gathers up the ripest, juiciest ones for some scrumptious dish to be served in one of our restaurants.  Whether you're craving a fresh Creole tomato salad or a crabmeat and tomato tower you can't go wrong with one of our delectable tomato dishes.  Like all of our vegetables, we grow them here to provide all our guests with the most amazing dining experience every time.  Hopefully one day I'll beat Chef to the garden gate and can sample a few for myself.

Secrets from Latil's Landing

Creole Tomato Salad

Serves 4

 

 

3 ripe tomatoes, cut into 1/4-inch-thick slices (about 2 pounds)

1 Vidalia or other sweet onion, thinly sliced and separated into rings

1/4 teaspoon salt

1 tablespoon thinly sliced fresh mint

2 teaspoons chopped fresh chives

   

Vinaigrette

4 teaspoons olive oil

4 teaspoons red wine vinegar

1 teaspoon Dijon mustard

1/2 teaspoon minced fresh garlic

 

To prepare salad, alternate tomato and onion slices on a platter. Sprinkle with salt. Top with

mint and chives.To prepare vinaigrette, combine oil, vinegar, mustard, and garlic in a jar. Cover

tightly; shake vigorously. Drizzle vinaigrette over salad, and serve at room temperature.
