Summer...

 

Oh summertime! The season we all love. It's that time of year where we enjoy lazy afternoons, warm breezes, iced tea and porch swings...right? Well, if it's your schedule and not the heat that's causing you to break a sweat this season, you're not alone.

 

Between work, vacation and social commitments, summer can be quite hectic! Then add balancing a schedule with kids on summer break, and it's no wonder parents breathe a sigh of relief when they see the school bus rounding the corner in September.

 

I remember back in May, sitting at my desk staring at the months of July and August on my 12-month desk calendar and romancing about the thoughts of summertime festivals, weekend barbecues and that slower pace we all seem enjoy. Or maybe that's just what I remember from those lemonade commercials?

 

This season, like most of you reading this, I have found myself feeling busier than ever. I realize the image I had in my head back in May, of sipping iced tea and relaxing on the porch swing while watching the sunset, now seems more realistic with a laptop and a cell phone in hand.

 

Well, good news my fellow "overscheduled, under summered" friends, we still have time! Yep, we have one more month! Well, technically two but this is Seattle. So, please join me in my own commitment to slow down, take a leisurely time out and enjoy the season. Try to find an hour each day to savor the things you love about summer. Have a barbecue dinner or a picnic on the beach for lunch. Leave work early one day and go to the zoo with your kids. Run through the sprinkler with them, they'll never forget it. Whatever you enjoy, even if it's only for a short time, make time.

Chef MichaelRed Wine Braised Beef Short Ribs

5 Boneless Beef Short Ribs, trimmed and cleaned cut into 7 oz portions

Flour, � cup

3 tbsp kosher salt

Ground Black Pepper, 1 tbsp

Olive Oil, 3-4 oz

1 carrot, roughly chopped

2 onions, roughly chopped

1 celery, roughly chopped

Garlic, 4 oz, roughly chopped

Herbs de Provence, � cup

Dried Thyme, � cup

Rubbed Sage, 2 tbsp

Fresh Rosemary Sprigs, 3-4

Tomato Paste, 8 oz

1 750ml bottle, Cabernet wine

Water, 3 qt

 

Preheat oven to 325 degrees. Season the short ribs with the salt and pepper. Lightly dust the short ribs with the flour. Heat a large heavy bottomed skillet with the olive oil. Add the short ribs while keeping the heat on medium high. Brown well on both sides. Do not crowd together as this might prevent browning. Remove the meat from skillet and add carrots, onions, garlic, herbs de Provence, sage and rosemary. Lower heat to medium and sweat together about 7-10 minutes. Add tomato paste and cook slowly over low heat, stirring frequently about 10 minutes. Add wine and reduce by half. Add water and rosemary and bring to a boil. This is the braising liquid. Place short ribs in an oven proof casserole dish or any deep square pan that will be able to hold both the meat and the braising liquid. Pour the braising liquid over the ribs, tightly cover and place in oven for two to three hours or until meat is fork tender. Remove the meat and puree the liquid. This now becomes your sauce. Adjust to taste with salt and pepper if necessary. 

 

Serve with your favorite mashed potato recipe.

Pacific Northwest Mouse Meet Inspires Hundreds 

 

The magic of the Pacific Northwest Mouse Meet was inside the Lynnwood Convention Center on August 4th. It was complete with over 500 guests, vendors, and a special appearance by Paige O'Hara, the voice of Belle from Disney's Beauty and the Beast.

    

Don Morin, the planning committee chairman behind the Pacific Northwest Mouse Meet said he was happy to host the 4th annual event again at the Lynnwood Convention Center.

 

"We first started looking at hotels to host the event," Morin explained about the venue planning process. "But then we took a tour of the Lynnwood Convention Center. The pricing and value was much better here."

 

Like several of the past events, this year's event was also sold out.

 

"We're always adding more things to make each year better than the last," Morin said.

LCC Welcomes New Catering Manager

 

A veteran in the business of catering, Dan Murphy joined the staff at the Lynnwood Convention Center in July as the Catering Manager.

 

Dan first began working in the catering industry when he was 17-years-old. Starting out as a dishwasher he worked his way up into management, learning and gaining experience at all levels of catering along the way.

 

He worked as the Catering Coordinator for Bancroft Catering in Berkley, CA and most recently, as the Catering Manager for a Seattle-based catering company.

 

A graduate of history from Western Washington University, he spends his spare time cheering for his favorite team, the Mariners alongside his wife Mandi and their 4-year-old daughter Alex.

Celebrate Summer With A Barbecue 

The symbolic ending of summer is upon us! There's no better way to celebrate than with a barbecue in the great Northwest. 

 

Starting with the right type of venue is important. Wherever you choose, make sure that it is a centrally located spot for your guests with an ample amount of parking.

 

Staying at home? Be sure to pick up the yard to prevent any unfortunate missteps! 

 

Make it a group effort. Turn it into a potluck where you provide the main dish and some refreshments, while asking friends to bring a side dish. 

 

A combination of active and sit down games makes something fun for everyone to participate in. Ladder ball, bocce ball, croquet, and a water balloon toss are great games for all ages to play.
