O29th March 2012, Chef Patron Cyrus Todiwala OBE DL of Cafe Spice Namaste cooked lunch for the Queen and the Duke of Edinburgh at Walthamstow Town Hall during the start of their Diamond Jubilee Tour.

 

Supported by his wife Pervin, an exceptional band of chef peers and students from 3 of London's top culinary schools, Cyrus created for the main course probably the earliest documented example of fusion cooking, the Indian version of a British classic, the Shepherd's Pie. 

It is called

 

'The Country Captain'

The Country Captain. Slowly cooked mutton from the rarest of the rare sheep from the Orkney Island of North Ronaldsay, animals that live purely on kelp and seaweed. The meat is cooked with spices in a red onion and tomato gravy, topped with cumin-flavoured mashed potato and baked.
