San Miguel de Allende

 
 I just returned from a fun filled 10 day shopping trip in Mexico. I was lucky enough to visit Mexico City, San Miguel de Allende and Tlaquepque. The highlight of the trip was San Miguel de Allende. San Miguel is a very small colonial town,  founded in the early 16th century.  Designated a National Monument in 1926, it retains its authentic colonial atmosphere.  You'll see no traffic lights,  no neon signs, no Gaps, no McDonalds, though there is one Starbucks, (but they were not allowed to utilze the branding).   What you will see are beautiful children in school uniforms, mariachi bands roaming the public gardens, friendly locals, many galleries, small restaurants and lots and lots of artesian shops.  The jardin, the main plaza, is San Miguel's sala, living room.  One can sit for hours just watching the day and the people go by. There speciality are  cooking and art schools.

There is a festival nearly every day.  On many nights, fireworks light the sky. On weekend, they stage a spectacular light show on the main church,  Church bells chime throughout the day and night.  Every Sunday, families stroll in the jardin, enjoying ice cream cones, listening to musicians, chatting with neighbors and foreigners.

Chicken Tostadas

 with Avocade Sauce

 

Ingredients

1 avocado, peeled and pitted

½ c. packed fresh cilantro leaves

1 clove garlic, crushed with press

½ c. reduced-fat sour cream

¼ cup lime juice

3 Tbsp. water

   Salt

1 head romaine lettuce, shredded

½ c sm. red onion, thinly sliced

1 sm. Serrano, seeded and finely chopped

4 crispy corn tortillas (can be purchased crispy or fry in ¼ inch oil until crispy)

3 c. cooked coarsely shredded chicken meat

4 tomatoes sliced

¼ c. crumbled fresh Mexican cheese

Lime wedges for garnish 
 

Directions

1. Prepare avocado sauce: In blender, puree avocado, cilantro, garlic, sour cream, lime juice, water, and ½ tsp salt until very smooth and refrigerate up to 1 day.

 

2.   In large bowl, combine lettuce, onion, and pepper. Cover and refrigerate vegetables up to 1 day.

 

3.  In a medium bowl, toss shredded chicken with ¾ cup avocado sauce. In bowl with lettuce mixture toss 1/8 tsp salt and remaining sauce.

 

4. Divide chicken among tortillas. Top with lettuce mixture, then tomatoes slices. Sprinkle cheese over tomatoes. Garnish with lime wedges.

 

 

 serves 4
