Sausage and nectarines! An unconventional yet delightful summer pairing from Executive Chef Shawn Applin, of Delessio Market & Bakery in San Francisco.


Seared Sausage with Kashiwase Farms Nectarines, Onions & Basil Salad

Ingredients

2 links of sausage
4 large Kashiwase Farms Nectarines
1 medium red onion, sliced 1/4-inch thick
1/2 bunch basil, torn into small pieces
splash sherry vinegar
splash extra virgin olive oil
salt and pepper to taste

Makes 4 servings

Cooking Process

In a hot pan, sear the sausage until it begins to brown, and is heated through.

Slice nectarines in half. Remove the pit, and slice crosswise about 1/2 inch thick. Remove the leaves from the stems of the basil and tear into pieces. Combine the basil, nectarines, and dress with the sherry vinegar, and the olive oil. Season to taste. Serve the hot sausage whole or cut into bit-size pieces, and serve with the nectarine salad.

Nicoise-Style Salad

Ingredients


Salad

1 lb. spring mix, butter lettuce leaves or a combination of both, washed, dried and picked through
½ lb small green beans, stem ends trimmed
1 lb. small fingerling potatoes or other small new potatoes, washed
8 eggs, warmed in a bowl of hot tap water to cover
7 oz. dry cured black olives, or Niçoise style olives
1 pint round red cherry tomatoes cut in half if needed
1 pound of Santa Rosa Seafood's "Smoasted" Hot Smoked Salmon, or large flaked white albacore tuna

Vinaigrette
1 tablespoon minced shallot (approximately ½ of a medium shallot)
1 teaspoon Dijon--style mustard
¼ cup good quality champagne or white balsamic vinegar
¾ cup good quality lemon or mild olive oil
2 tablespoons capers, rinsed and dried
3 Tbsp. chopped Italian parsley
1 teaspoon finely minced fresh lemon thyme
Freshly ground pepper to taste
Chopped chives and/ or basil chiffonade to garnish

Serves 8

Cooking Process
Step 1: One pot cooking method: In a large, deep pot bring 2 quarts of water and 1 tablespoon of kosher salt to a boil. Meanwhile prepare an ice bath: in a large bowl, add about 3 cups of water to about 4 cups of ice. Set aside. Drop green beans into boiling water, stir and cook 3 minutes or until al dente. Quickly scoop beans from water with a small strainer spoon and spread out evenly on clean paper towels to cool. Next in the same boiling water, keeping the smaller potatoes whole, cut only the larger ones so the potatoes are nearly equal in size. Place potatoes into boiling water, reduce to a simmer and cook for about 10-15 minutes until they can be pierced with a paring knife. Remove potatoes with a strainer spoon when they are done. Cool and cut into bite sized pieces.

Step 2: Remove eggs from warm tap water and gently lower into the same pot of simmering water. Return to a full boil, then turn off heat and cover the pot with a tight fitting lid. Leave eggs in hot water for 15 minutes. When eggs are done, chill in ice bath for 5 minutes, peel and cut in half lengthwise with a wet pairing knife.

Step 3: In a medium bowl blend shallot, mustard and vinegar. Slowly drizzle oil into mixture and whisk until emulsified. Add capers, parsley, thyme and pepper. Taste and adjust. Set aside.

Step 4: In a very large bowl, toss greens with just enough of the vinaigrette to evenly coat the leaves. Arrange the beans and potatoes in groups on a large platter or on individual chilled plates. Mound greens in the center of plates or platter. Lightly toss the tomatoes with a small amount of vinaigrette. Arrange tomatoes and olives in groups around the greens on the plates. Add 2 egg halves to each plate. Season eggs and potatoes with salt and pepper. Finish the salad with large chunks of smoked salmon. Drizzle a little dressing over the salmon, beans and potatoes. Top with chives and/ or basil chiffonade. Fabulous!

It's been a few months since we have been in touch with our newsletter. We are excited to announce that our summer here at Spacial Design has been quite busy!

We are so thankful to you for your referrals and for our new clients that have decided to "go for it"  on their remodeling projects!

We have been designing many amazing Kitchens and Bath with an emphasis on using Green Materials.  In this issue we look forward to sharing many new green products that we are excited about.

How can YOU be Green?

We all want to know how to make our lives a little "greener." Not literally, but in making conscience choices, becoming more "green" is how you can take a few steps forward.

In our busy lives it can seem overwhelming to have to do "another thing" So here are some things we have each done and counting!


Susan & Jenn's list of changes they have made to be more "green" in our Kitchens and Homes!

1. Recycling - Reuse & Reduce! Sort your recycling and donate items you are not using. Check with your local garbage service for recycling options.

2. We buy green products. From cleaning products, personal hygine to organic food. Read labels to understand what the impact from this product will be on the environment, your family and community. Buy locally whenever possible.
3. Water. Eliminate your plastic water bottles and purchase SIGG or Klean Kanteen bottles. Kleen Kanteen even has a wine karafe for picnics!
4. We use a water filter in our homes! Even if you already have an existing faucet it is easy to add one. See the Always Fresh H2O System below.
5. Bye Bye plastic storage containers  for leftovers or kid's lunches. We use BPA free and Phthalate free or glass containers. Also, Stop using plastic in the microwave...glass or unbleached recycled wax paper is better!
6.No more plastic baggies for us. We opt for wax unbleached bags. Natural Value has an extensive line of recycled plastic wrap with no pvc & 100% recycled aluminum foil. Safeway even carries a few of their products now!
7.We use garage bags so why not use one that is recycled and degradable? Oh and they brake down in the landfill in 12-24 months. PVC free, no plasticizers and non toxic! You can buy them here:                         www.greenfeet.com
8.Increase your use of natural fibers. We BYOB (bring our own bag) You can get a fabulous woven basket or a natural fiber bag to re-use over and over again.
9. We Compost. All the time we spend in our Kitchens we accumulate waste in the process of cooking. Start a countertop compost (a small can with a lid will suffice) and as you get going with it, you can move it outside to a larger bid. See www.composters.com or www.eartheasy.com to get started.

We're not talking about committing to hugely ambitious changes - just baby steps. Changes to your habits that are better for the earth and for your families health!

Countertop Choices - Going "Greener"

Your countertops play a starring role in your kitchen design, helping set the style and tone for the heart of your home. There are so many options! But choosing your kitchen countertops doesn't have to be difficult.

The first step in finding your design style is to ask yourself simple questions. Start by asking, "How much can I spend?" If you're on a budget,  there are many green alternatives such as EQ Countertops they provide an "Eco" laminate, Cork, or Bamboo which are all great looks.

For folks with more resources, Squak Mountain Stone (concrete composite) Vetrazzo, Icestone,Trinity Glass (concrete and recycled glass) Eco Top which is made from wood pulp, bamboo fiber and resin or Paperstone or Richlite which made from wood pulp & resin are excellent choices.

Next, ask yourself, "What's my lifestyle?" Different circumstances will rate different materials. For example, families with children will want something durable and stain-resistant; gourmet cooks will prefer hard-working materials and avid entertainers will like a marriage of high style and convenience.

Green Statement

Christiana has been pursuing environmentally, ecologically friendly products, and manufacturing practices long before they have been socially fashionable. Having been involved in agriculture, they realize just how important it is to conserve our natural resources so that they will be available to provide a way of life for the next generation. Careful research of available materials and manufacturing methods is paramount to maintaining a green manufacturing lifestyle. They are participating members of the KCMA and are ESP ("Green") certified by that association.

Christiana Cabinetry is also CARB93120 Phase 2 compliant for formaldehyde. Although Phase 1 is currently the only CARB requirement in place, they believe it is imperative to offer the safest product to our clients all the time. Phase 2compliance allows us to exceed all of CARB's current hazardous emission regulations for the state of California. At less than .05 ppm emissions, you can be sure you're getting the safest product possible for your home.

Lumber
1.Source lumber from managed forests wherever possible
2.Avoid using any materials from the endangered species list
3.Avoid using any lumber that would deplete the rainforests
4.Use reclaimed lumberupon request.

Panels
1.Use domestically grown and manufactured poplar plywood cores (the origin of imported plywood cores cannot be authenticated)
2.The glue is formaldehyde free.
3.Cabinetry interior is maple, which is domestically grown.

Finish
1.Use HAPS, isocyanate & formaldehyde free
finishes in our production process
2.Constantly investigating the utilization of water-bourne coatings in our finishing process, presently we have not found any to perform consistently in the many multi-step processes that are offered
3.Two-component finishing pump mixes only the necessary quantity for finishing, avoiding unnecessary product losses
4.All finish waste materials are disposed of thru incineration.

General
1.All cardboard, paper, and wood waste is recycled into mulch
2.Use recycled paper in the office (copy paper, paper towels, etc.)
3.Sawdust is utilized by local farmers
