Lemon Lemon Loaf

Lemon Lemon cake

FOR THE LEMON CAKE
1 1/2 cups cake flour
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
2 1/4 cups sugar
8 large eggs, at room temperature
1/4 cup grated lemon zest (from about 4 lemons)
1/4 cup fresh lemon juice
2 cups (4 sticks) unsalted butter, melted and cooled
1/2 cup sour cream, at room temperature
2 teaspoons pure vanilla extract

FOR THE LEMON SYRUP
1/3 cup fresh lemon juice
1/3 cup sugar

FOR THE LEMON GLAZE (OPTIONAL)
2 cups confectioners' sugar, sifted, or more if needed
4 to 6 tablespoons fresh lemon juice



Grilled Chicken Salad with Radishes, Cucumbers, and Tarragon Pesto

Chicken Salad

Ingredients
1/4 cup (packed) fresh tarragon leaves plus 2 teaspoons chopped
1/4 cup (packed) fresh Italian parsley leaves
4 tablespoons pine nuts, divided
5 teaspoons fresh lemon juice, divided
2 teaspoons chopped shallot
6 tablespoons (or more) olive oil, divided, plus additional for brushing
4 boneless chicken breast halves
4 1/2-inch-thick slices country-style French or sourdough bread
1 5-ounce package mixed baby greens
1 cup thinly sliced radishes (from 1 large bunch)
1 cup thinly sliced Japanese cucumbers (about 1 1/2)

Preparation
Place 1/4 cup tarragon leaves,
parsley, 2 tablespoons pine nuts, 1 teaspoon lemon juice, and shallot in mini processor; chop coarsely. With machine running, gradually add 3 tablespoons olive oil. Season pesto to taste with salt and pepper. Add more olive oil by teaspoonfuls to thin, if necessary.
Whisk 2 teaspoons chopped tarragon, remaining 4 teaspoons lemon juice, and 3 tablespoons oil in small bowl. Season dressing with salt and pepper.
Prepare barbecue (medium-high heat). Brush chicken breasts on both sides with oil. Sprinkle with salt and pepper. Grill until grill marks form, skin is crisp, and chicken is cooked through, 7 to 8 minutes per side. Transfer to work surface; let rest 5 minutes. Using clean brush, brush both sides of bread with oil. Sprinkle with salt and pepper. Grill until dark-brown grill marks appear on both sides, 2 to 3 minutes per side.
Place greens, radishes, and cucumbers in large bowl. Toss with dressing. Season to taste with salt and pepper. Divide salad among 4 plates.
Cut grilled chicken breasts crosswise into 1/3-inch-thick slices. Arrange 1 sliced chicken breast atop salad on each plate. Spoon tarragon pesto over chicken. Sprinkle remaining 2 tablespoons pine nuts over salads. Serve with grilled bread slices.

Vesta Fire Pizza Ovens

Each of the Vesta ovens are quality products that offer great pizza and other foods in a short time.

Hardwood is recommended (pecan or other fruit woods) Oak can also be used but it gives off more smoke.

The fire is easily started with a few sheets of newspaper and small pieces of wood in the firebox. In about 15-20 minutes your oven with be at 600 degrees and ready to add larger pieces of wood. After the fire is going, the smoke level is very low to none. Thin crust pizza is done in 2-5 minutes, depending on crust thickness and oven temperature. The oven temperature is easily controlled with the sliding damper on the wood box door, and can be monitored with the temperature gauge on the front of the oven.

Homeowners are Not Moving...
But they are Still Planning to Remodel!
 

Although problems in the economy are affecting everyone, a recent study by the Research Institute for Cooking & Kitchen Intelligence (RICKI) shows that some homeowners are moving forward with remodeling, anyway.
 
Authors of the study spoke with 19 certified kitchen designers. Of these, about 33 percent are hearing from new clients, while the other 66 percent say the economy has had a drastic effect on their business. Even residents pursuing new projects are cutting costs, both by purchasing less expensive items for their kitchen remodels, and by reducing the sizes of their projects.
 
Another negative impact of the economy is that preserving our environment has taken a back seat to reducing spending, even though the sales of "green" remodeling materials had picked up before the bottom fell out of the market.
 
In addition to trying to save as much as possible now, homeowners are trying to protect themselves in the future by going with suppliers who are tried-and-true, and that will likely be around to offer help with warranties and with other services down the road.
 
In addition to these difficulties, however, there are some glimmers of hope. These include residents' preference to remodel instead of to sell their homes; the existence of geographic pockets in the United States that are still untouched by the recession; and the readiness of professional remodelers, suppliers and designers.

Small Changes in your Home Can Make a Big Impression!


The change of seasons always inspires us to declutter, reorganize and restyle areas in our homes in hopes of having some sort of a new start and a less stressful life.

With the current economic times, not everyone has the means to do a "Total" Remodel. So instead of feeling discouraged, take into consideration making changes that are not going to break the bank but will leave you feeling as if you revamped!
