Happy Thanksgiving!
I hear that recycling is a good thing, so I've decided (this one time) to recycle the gratitude article I wrote just before last Thanksgiving. For one thing, I really like it; plus it's a way of giving myself a little break before the holiday! In any case, many of you are new enough to my newsletter that you haven't read this yet. Enjoy!
This Thanksgiving I have a suggestion for you that will completely change the way you think about being grateful. If you've been reading this newsletter for a while, you know how much I encourage recognizing the abundance in your life and focusing on what is positive. I'm so excited that we have a whole day to celebrate and practice that concept!
And I do mean practice. As humans, we tend to troubleshoot. We zero in on what's not perfect and devote our attentions to what we think should be fixed - whether it's the drywall we put up ourselves, the wording of a proposal, or the shape of our bodies. In doing this, many of us downplay our accomplishments and forget to appreciate the beauty of ourselves and our surroundings.
This Thanksgiving, you will never again forget how enveloped you are by abundance when you try the following simple exercise. You may feel grateful for your family, your home, your food, but for this example, I am only going to focus on one item that will probably end up on your plate this Thursday: your potato.
When you look down at this simple tuber on Thanksgiving day, whether it has been baked, or boiled and mashed, I want you to imagine (or even better, discuss with your family) everything that has conspired to bring this food to your plate.
Let's start with the plant. Your potato nestled in the earth for months, drawing minerals and nutrients from dirt - that earth is in your potato. Your potato rooted a whole plant whose leaves absorbed the rays of the sun to metabolize those nutrients - that sunlight is in your potato. The molecules of water from rain that pelted the dirt are also in your potato.
When you eat and digest your potato, these elements will become part of every cell of your body - your skin, your hair, your brain cells. But that's not all. Imagine all the human hands that worked to bring you your potato: the person who planted it, the person who picked it, the person who ran the machine to clean it, bag it, transport it. Of course, don't forget the person who prepared your potato. Now imagine all the minds that engineered the tractors, the trucks, the refrigeration systems, the stove; and imagine all the materials that create these things and where they come from - the metal, the glass, the plastic, the gasoline.
Are you amazed at the orchestration that has culminated on your plate? Good! When you take that first smooth bite into your mouth, I encourage you to feel connected to each particle of sun and rain, to every molecule of the earth, to each and every heartbeat and nerve pulsation that played a part.
That, to me, is gratitude.

Chewing Well
When it comes to increased health, it's not just what we eat, but how we eat. Digestion actually begins in the mouth, where contact with our teeth and digestive enzymes in our saliva break down food. But these days most of us rush through the whole eating experience, barely acknowledging what we're putting in our mouths. We eat while distracted-working, reading, talking, and watching television-and swallow our food practically whole. On average we chew each bite only eight times. It's no wonder many people have digestive problems!
There are many great reasons to slow down and chew your food. Saliva breaks down food into simple sugars, creating a sweet taste. The more we chew, the sweeter our food becomes, so we don't crave those after-meal sweets. Chewing reduces digestive distress and improves assimilation, allowing our bodies to absorb maximum nutrition from each bite of food. More chewing produces more endorphins, the brain chemicals responsible for creating good feelings. It's also helpful for weight loss, because when we are chewing well, we are more able to feel when we are full. In fact, chewing can promote healing and circulation, enhance immunity, increase energy and endurance, improve skin health and stabilize weight.
The power of chewing is so great that there are stories of concentration camp survivors who made it through their ordeals, when others did not, by chewing their meager rations up to 300 times per bite of food. For most of us 300 chews is a daunting and unrealistic goal. However, you can experience the benefits of chewing by increasing to 30 chews per bite. Try it and see how you feel.
Taking time with our meal, beginning with chewing, allows us to enjoy the whole experience of eating: the smells, flavors and textures. It helps us to give thanks, to show appreciation for the abundance in our lives and to develop patience and self-control. Try eating without the TV, computer, newspaper, or noisy company. Instead just pay attention to the food and to how you are breathing and chewing.
This kind of quiet can be confronting at first, since we are used to a steady stream of advertising, news, media, email, and demands from others. But as you create a new habit, you will begin to appreciate eating without rushing. You have to eat every day-why not learn to savor and enjoy it? |
Food Focus: Quinoa
I can hardly say enough about this fantastic food! Quinoa (pronounced KEEN-wah), is an ancient grain that can be traced back eight thousand years in the high plains of the Andes Mountains in South America. The Inca's thrived on this staple, and it is said that they were able to run such long distances in high altitudes because of this grain!
Quinoa has the highest nutritional profile of all the grains. That means it has higher levels of vitamins, minerals, and other nutrients than any other grain. Other benefits:
- contains all eight amino acids to make it a complete protein
- has a protein content equal to milk and highest of all the grains
- high in B vitamins, iron, zinc, potassium, calcium, and vitamin E
- easy to digest because it is gluten-free
- ideal food for endurance
- strengthening to the kidneys and heart.
Quinoa also cooks the fastest of any other whole grains! When cooked, the outer germ surrounding the seed breaks open to form a tiny crisp curlicue, called an equatorial ring (yes, that's true!), while the inner grain becomes soft and translucent. This double texture makes it delicious and fun to eat. It can be used like oatmeal for breakfast, in a soup, salad, wrap or stirfry for lunch or dinner, or like rice pudding for dessert. To save time, cook a lot of quinoa at once and store it for up to a week for many quick and easy meals! Leftovers can be reheated and reinvented in the following ways:
- reheat with a splash of organic nut, soy or cow's milk for breakfast porridge
- add dried fruit, nuts and cinnamon or nutmeg for a sweet treat
- add finely chopped raw vegetables and dressing for a cooling salad
- add to chopped stirfried vegetables and protein with sauce for a delicious dinner

| Recipe of the Month:
Quinoa, Cashew and Grape Salad

PREP TIME: 10 minutes
COOK TIME: 15 minutes
SERVES: 2
Ingredients:
1 cup quinoa
1 cup raw cashews
2 T apple cider vinegar
1 T mirin (rice cooking wine)
2 tsp chopped fresh herbs, such as dill or mint
1 stalk celery, finely sliced
1 cup seedless grapes, halved
sea salt and pepper
Directions:
1. Bring a large pot of lightly salted water to boil.
2. Add quinoa and simmer for 12-15 minutes, or until grains are tender and circular threads detach.
3. Drain quinoa, rinse, and drain again. Spread on baking sheet to dry.
4. In a frying pan, toast cashews over moderate to low heat, stirring frequently, until golden brown. Remove to a bowl to cool, then chop roughly.
5. In a large bowl, combine vinegar, mirin, and 1 tsp. sea salt. Toss in herbs, celery, grapes, quinoa and cashews.
6. Adjust seasoning to taste and leave salad to stand at least 1 hour before serving.
Tasty Note: Quinoa may be cooked in vegetable or chicken stock for more complex flavor
Variation: You may substitute wild or brown rice for the quinoa, and almonds or hazelnuts for the cashews |
