Staff Spotlight
Vera Carp
Staff Trainee 
Max Vera Carp of Tuna, Texas, came to us after recently working as a
server-in-training for "Helen and Inita's Hot-to-Trot Catering".
We love Vera for her can-do attitude, her snazzy glasses, and her willingness to tell it like it is.

When she is not catering, Vera spends her time working to ban dirty books from the local public library and rewriting bible school songs to root out any vestiges of
secular humanism.

Her favorite color is pink.

If you don't recognize Vera from attending any of our parties, it's because she's never actually been to one. She's one of the many hilarious characters played by one of our real staff members, Michael Gaffney, in the show Red, White and Tuna, playing at the California Conservatory Theatre in San Leandro, now through May 6th. 

Michael has been with us from the beginning, and has taught us so much about how to cater professionally.  We also rely on him for all of our party staffing. He is an amazing contributor, friend, and performer. We recommend you go see him in this production!  


Fun at the Food Bank
7 layer cookiesTHANK YOU so much to those of you that joined us at the Alameda County Community Food Bank last Monday. The food bank was so appreciative of everyone's time and efforts and we had a great time.

If you didn't make it this time, keep your eyes open for our next quarterly food bank volunteer day that we'll schedule for some time in July of this year.

 It has been a big year with the opening of our new restaurant, Phil's Sliders, while business has continued to grow for our Hugh Groman Catering and Greenleaf Platters divisions.  We are incredibly lucky to have so much work.
 
I want to take a moment to thank my husband Noah, my family, and my friends for their support. Thank you as well to the staff at all three of our companies for "making it all happen" day after day.  You are doing an amazing job. 

 

And thank you to all of YOU for your repeat business and referrals.  We are only able to do what we do because of your support.  Happy Spring. :)

Featured Recipe - Spears of endive with smoked salmon, shaved fennel, lemon, fresh goat cheese, chives, and tarragon (serves 10 - yield 20 pieces)

* 3Max/4 pound endive

* 1/2 pound goat cheese, softened 

* 1/2 pound smoked salmon, rolled into small rosettes

* 1/4 bunch fresh chives, sliced fine

* 1/4 bunch tarragon, whole leaves

* 1/3 pound fennel bulb, grated and tossed with lemon, olive oil, salt, and pepper

* lemon juice, for fennel

* olive oil, for fennel

* salt and pepper, for fennel

 
1.Make salmon rosettes.  
 
2.Grate fennel and dress with lemon, olive oil, salt and pepper.  Bring goat cheese to room temperature to soften.
 
3.Lay out medium sized spears of endive.  Spread goat cheese the length of spear.  Add some fennel, then a salmon rosette.
 
4.Garnish with chives and one leaf of tarragon per spear.
