Recently, a friend of ours was at Oakwood Athletic Club in Lafayette and overheard another gym member RAVING about a restaurant in Berkeley. Turns out, this unidentified man was talking about Phil's Sliders! He was telling people how much he loved the burgers, tater tots, and homemade oreos and was encouraging them to head over to Phil's. Mystery man, we thank you for spreading the word!!! Please let us know who you are. We'd love to meet you at the restaurant and treat you to a burger. Also, thank you so much to those of you who have reviewed Phil's, HGC and Greenleaf Platters on social networking sites such as YELP, Berkeley Parents Network and Chowhound, as they are one of the most powerful sources of new business for us. Staff Spotlight Max Stiers Cook |
 Max Stiers is a native San Franciscan and a passionate cook. He has worked in a number of Bay Area restaurants and catering companies over the last 8 years, including an internship at Foreign Cinema after completing the culinary program at City College San Francisco. Max has worked for Hugh for the past 3 years as both a prep cook and on-site chef, working mostly in the HGC/Greenleaf production kitchen.
We love Max for his sweet unassuming nature, his "can do" attitude, his neat working habits, and his love of and respect for food. Max makes some amazing staff meals, and he puts lots of love and care into all of his cooking.
When not cooking, Max is busy playing drums, being outdoors, and eating cuisines from around the world. "Hugh has a lot of integrity--he's wonderful to work for because he understands the value of treating his employees well. The fact that Hugh retains so many long-term employees really shows his commitment to his staff. We're like a big family here."
Max is enthused about the new restaurant: "I'm really excited about Phil's...I'm confident it will be a smash, especially because we'll be producing almost all the food from scratch in the HGC kitchen!"

I want to thank all of you who have come out to Phil's Sliders (2024 Shattuck Ave. in Berkeley) to support us. We got some AMAZING press recently which was very exciting for us.
For those of you who haven't had a chance to check us out, we are excited to see you soon! We are right around the corner from Berkeley Rep, the Aurora Theater, Freight and Salvage and a bunch of movie theaters. My husband and I saw the new Rita Moreno show at Berkeley Rep, and it was well worth seeing, so perhaps it is a good excuse to buy some theater tickets and come to downtown Berkeley to visit Phil's. We are working diligently to improve the restaurant, to polish the service and to consistently produce the most delicious food possible. David, Teresa, Jennie and the crew in the kitchen have put everything they have into supplying Phil's while keeping up with the demands of Hugh Groman Catering and Greenleaf Platters.
I have a favor to ask. The next time you come to Phil's, take a photo with your camera phone, and then post it on facebook or somewhere else on-line with a positive blurb about your visit. :) A new restaurant needs lots of word of mouth, and this kind of help is so very appreciated.

Featured Recipe -Endive with a salsa of avocado, green olive, capers, red onion, lime and jalapeno
| 3 endive spears - leaves separated 2 medium avocados 7 green olives, pitted, cut into eighths 1 tablespoon capers, drained, rough chopped if large, whole if small 1 tablespoon red onion, finely diced 1/3 medium jalapeņo pepper, finely chopped lime juice, to taste (be generous) kosher salt and pepper, to taste 3 ounces feta, crumbled
Preparation 1. Day of event: Prep the olives, capers, jalapeņo, red onion and lime juice and combine in a bowl.
2. Dice the avocado and fold gently into mixture. Season with salt and pepper and more lime juice to taste.
3. Fill endive leaves with salsa and top with crumbled feta (can be done up to 1 hour before guests arrive).

Environmental Focus - Feel good about your potato tots
| At Phil's, we make our potato tots fresh from Russet potatoes and fry them in canola oil. We go through 50 to 100 pounds of potatoes every day! And our oil gets picked up by a company that filters it and uses it for biofuel. We are always looking for ways to save energy and minimize waste at our new restaurant.
