Staff Spotlight Hope Mirlis Server

 We are happy to feature Hope Mirlis in this Staff Spotlight. We love Hope for her "can do" attitude, boundless professionalism, effortless hospitality and her fabulous sense of humor. Hope is a native New Yorker, who spent over a decade in Atlanta where she performed and choreographed as well as co-founded Synchronicity Theatre. She currently wears many hats - educator, administrator, performer, and brings a whole lot of energy to whatever she does. She is an active stage and commercial actress and is a dedicated teacher of acting, yoga and dance for all ages. Her latest venture - Namaste Gourmet - combines private yoga instruction with personal cheffing. Hope says she "loves being a member of the HGC family because of the sense of camaraderie and the attention to detail. Everyone involved, from the kitchen staff to the servers, strives for fun and efficiency. Well that, and the food is really, really good". www.hopemirlis.com

Message from Hugh

I was 12 years old and my parents Phil and Hadele were hosting one of their many parties; our big but never big enough formal dining room table was crowded knee-to-knee with adults. I was sitting next to my dad, and sitting next to me was a foreign exchange student who had been brought to the party by one of my parents' friends. She was maybe 21, the only other "kid" at the table besides me, and she barely spoke a word of English. In fact, she was so quiet, looking down at her plate the whole time, it seemed like she was trying to disappear altogether. Midway through the meal, as she was reaching for a bread roll, she accidentally knocked over her glass of red wine onto the white tablecloth. The stain flowed slowly across the fabric. Everyone froze, except my father. Barely pausing between bites, my dad casually backhanded his own wine glass onto the table. Laughter filled the room. Even the exchange student smiled. And then we all went back to the business of eating and talking.
Much more gourmand than gourmet, my dad Phil enjoys simple, juicy, honest food. If the philosophy behind a great burger can be applied to life, my dad lives it, treating people around him with respect and appreciation for their essential goodness.
There are so many things I've learned from my father, and he is always supportive of me and my career. So I felt it was only right to name my new business after him. This spring, my team and I are opening a small counter service restaurant in downtown Berkeley serving sliders, potato tots, cole slaw, milkshakes, homemade sodas and yummy baked goods. The restaurant will be called Phil's Sliders. The bake shop will be called Hadele's Bake Shop to honor my mother, who certainly appreciates a yummy treat! (Mom, I love you, too!)
We will continue to offer our full service catering as well as our Greenleaf Platters service. We certainly hope we'll see you there when you are in the neighborhood!

Featured Recipe - Maple Sesame Cole Slaw (serves 10) | SLAW: 2 Tbsp. diced red onion 1lb. carrots -- peeled and grated 1/2 lb. green cabbage -- sliced fine or grated 1/2 lb. red cabbage -- sliced fine or grated salt and pepper -- to taste 1/2 cup cole slaw dressing
DRESSING: 1/4 cup mayonnaise 2 tsp. dijon mustard 2 tsp. maple syrup 2 tsp. honey 1/2 tsp. sesame oil 2 tsp. red wine vinegar pinch cayenne pepper 1/4 tsp. kosher salt
Up to one week ahead: Make cole slaw dressing by whisking all ingredients together.
Up to one day ahead: Prep all vegetables for cole slaw.
Day of event: Combine vegetables and dress with dressing and salt and pepper

Environmental Focus - Opening a new restaurant!
| Opening a new restaurant is a huge opportunity to make good environmental choices. We are looking for environmental ways to handle construction and will plan our lighting to be as energy efficient as possible. We plan to use minimal and 100% compostable packaging for all our products. All our sodas will be homemade so there won't be any plastic bottles. We'll be using 100% grass fed beef from Marin Sun Farms, as well as organic produce and dairy.
Feel free to send us YOUR ideas for how we can make Phil's Sliders even more environmentally conscious. :)
